08.01.2022 This is How Green Tea May Stop Prostate Cancer: Two recent studies from Asia have confirmed stunning preventive powers of green tea against prostate cancer. Men... who habitually drank green tea (every day) in Hong Kong had 40% less risk of this cancer, while those in Vietnam who drank at least 500 ml daily had 70% less risk. But how does green tea work? A new study has revealed that EGCGthe key antioxidant of green teaseems to weaken cancer cells by inactivating a key pro-cancer compound called HSP90 (Heat Shock Protein 90). Without HSP90, the cancer cells cant manufacture and utilize proteins properly, and die off. The effect is so powerful, that EGCG killed off 92% of prostate cancer cells in a test-tube, and mice treated with EGCG had tumors 67% smaller than untreated mice. Researchers commented that this special property of green tea was likely the key reason for its anticancer properties across other cancers as well. 08.01.2022 Made a Sencha Green Tea cake today. Cheated a bit, used a vanilla cake mix and substituted the milk with a strong, two teaspoons, half cup of strained sencha green tea. Just added a teaspoon of pure green tea powder to the icing. The cake was demolished in no time at all by hungry little beings. www.southernforestgreentea.com

04.01.2022 Love this segment by Tracy Lockwood Beckerman. Although I must point out she is comparing Chinese style green tea to Matcha. Chinese green tea is pan fried or baked shortly after harvest, this gives the tea a nuttier roasted flavour. Japanese green tea like Matcha and Sencha are steamed shortly after harvest to produce a grassier umami flavour.
