21.01.2022 On the way to Hobart, we stopped at Pyengana Dairy for some cheese. Lunch at Frogmore Winery: Carpaccio with truffle aiole and scallop seviche with wakame, grapefruit, roe miso crumbs. Pretty amazing!

20.01.2022 This morning I visited a oysters farm in St Helens and Binalong Bay beach. What a wonderful place and sensational food! This afternoon a short course on sous vide at the White Sands Estate Hotel with Chef Hassan from Maldives. Missing the Coast but enjoying Tasmania!

02.01.2022 After my kitchen, this is one of the cleanest and better organised kitchens I've visited in Australia: The Black Toro in Melbourne. And they achieve great results with sous vide too!
