15.01.2022 + CHICKEN patties Ingredients: 750g lean minced chicken 2 cups baby spinach leaves 2 small onions, chopped... 3 cloves of garlic, crushed 1 tbs +CHICKEN spice 1 tsp +CHILLI spice +SALT pinch +PEPPER pinch 2 eggs, lightly beaten 1/2 cup pine nuts 3/4 cup fresh breadcrumbs olive oil for frying Method: 1. Add chicken, spinach, onion, garlic, +SPICES and eggs to food processor and pulse until combined, scraping down sides of bowl if necessary 2. Stir through pine nuts 3. With slightly wet hands, shape mixture into small patties, then roll in breadcrumbs and place onto lined baking trays. Refrigerate for 30mins to firm up 4. Heat oil in pan and shallow fry patties on medium until golden on both sides and cooked through. Makes around 10-15 patties @cookingwithvanessa_ these are a new fav!

11.01.2022 Craving this fresh kale salad by @cookingwithvanessa_ +CHILLI chicken and kale salad Ingredients: 2 Chicken breasts (grilled and sliced)... +CHICKEN spice blend 400g tin of Chickpeas (drained and rinsed) 1/4 cup Pine nuts (toasted) 2 cups Kale (stems removed and chopped) 2 tbs Olive oil +CHILLI flakes Method: 1. Marinate chicken in olive oil and +CHICKEN spice for at least one hour but preferably overnight. Grill and slice, then set aside 2. Place kale in a bowl with a dash of olive oil and pinch of salt, and massage until glossy and tender 3.
