25.01.2022 A recent Wedding we catered for to the loveliest couple and their families. It was a lovely day, but everyone commented on our BBQ Spare Ribs and how tender they were, they couldn't get enough even though we supplied twice the normal amount, they all were eaten,,,,so yummy.....!!! Thankyou for having us there on your special Day !!!

Your organisation is a credit to you and the way you set about the preparation and cooking of the meal was very professional.The cooking of the pig was quite amazing to watch over a period of several hours. The pig was absolutely mouth watering, something everyone should experience once in their life time(especially cooked by Darren... ). I would like to thank Darren and Craig for their friendly service to all my guests. The cleanup after the meal was spotless. October 22 at 9:12 PM A huge Thank you to Kelsey and the team for the fabulous spit roast they put together for my husband's 60th birthday. The food was so delicious, the salads fresh and the roast potatoes to die for. Every thing, from the set up, table decorations, beautiful lay out of the food, professional serving to guests and unobtrusive pack up, was perfect. Kelsey was so wonderful to do business with.

I cannot thank them enough for making one of the most important parts of the reception so easy for my husband and I. The booking with Kelsey was easy with no hidden catches, and she helped us choose the most "lavish" option for our budget. The food was beautifully presented and many guests went back for ...seconds. Everyone was impressed by the fruit carvings and made lots of comments to me. The honey soy chicken and caesar salad were the most popular with my guests - definitely the stars of the show. For how affordable the buffet was, we were expecting less frills, but were surprised and impressed by the effort put into decoration (candlesticks, flower vases, stainless steel trays, etc.). The Spit Roast Company obviously take pride in what they do. Thank you again! 12.01.2022 How to keep the top tier of your wedding cake If you’re planning on keeping your top tier and freezing it to eat on your first wedding anniversary, then you’re going to need to know exactly how to go about it! We asked the experts how to freeze the top tier to ensure the best tasting cake. From The Wild Vegan & Gluten Free Cakes said:... I would suggest serving it with a bit of berry sauce or some sort of yummy saucy side like caramel to add some moisture to the cake if it’s like a lighter cake or sponge consistency. The more dense kinds of mudcakes and cheesecakes freeze better, because of their texture but you can still totally freeze other types of cakes successfully to enjoy further down the track Blissful Inspirations Cakes and Sweets Make sure you remove any decorations like flowers, figurines etc and Triple wrap the cake with plastic wrap and then double wrap tightly with foil. This prevents freezer burn and any freezer smell getting into the cake. Make sure you put the date and what is in the wrapped foil so you don’t forget what it is. Sweet Affection Cake Design said: keep it whole, don’t cut it up as it will keep moister longer as one whole cake. If the cake is covered with fondant, wrap your cake well with 4 layers of cling wrap and place in a zip lock bag or wrapped again in foil well. If it’s buttercream you will need to refrigerate it for at least 30 minutes to firm up the buttercream then cling wrap, so the cling wrap doesn’t stick to it. When you want to take it out of the freezer, with the fondant cake leave it on the bench all wrapped up as is until it has completely thawed, usually overnight, then take off the cling wrap. This will prevent the cake from going sticky as the condensation will occur on the outside of the plastic rather than on the fondant. If it’s a buttercream cake, it is wise to take the cling wrap off while it’s frozen so as it doesn’t pull off the buttercream when it becomes soft. Unfortunately, not all cakes can be frozen for the same length of time as it depends on the type of cake it is. Mud cakes will keep frozen longer but I wouldn’t freeze it for longer than 6 months. It will not go mouldy but the quality will not be the same if you freeze it for longer than that and it will be drier. Other lighter cakes butter or pound cake may be frozen up to 3-4 months, any longer and they start to break down and will be dry without much flavour. Sweetcheeks Cookies and Cakes said: The proper way to do it, to ensure your cake doesn’t get freezer burn, is to (first take any toppers/flowers or decorations off of course) wrap the cake tightly in cling wrap, do 3-4 layers of this, and then you can wrap in a layer or two of aluminum foil. When thawing it out, leave it out on the bench overnight to come to room temperature, and the next day; enjoy! image

There was of course 'Food, fun, entertainers x 3, music, a huge crowd of friends family and 'the Flying Ashtons' . Could'nt ask to cater for the nicest people whom made us feel at home. We had a large group of 70 and the Spit Roast Company Sunshine Coast prepared an antipasto grazing table, full buffet main meal, and dessert buffet. Food was fabulous, everyone had a great time. Kelsey and the team are incredibly hard working. I had to alter the menu slightly to include some gluten free options that was no trouble at all for them. Highly recommended!!!!

01.01.2022 This is a Wedding Function that we catered for on the 2nd February 19. We served a grazing Table outside under a Yurt tent for several hours, followed by a Full Wedding Buffet, Desserts, Wedding Cake & Tea/Coffee station inside at the Montville Hall.
