What an epic wkend cottage getaway that you’ve created for all of us! So grateful and blessed to be here with all your favourite people Angiepangie and more awesome peeps to arrive tomorrow! This particular b’day cake I prepared at home earlier whilst doing a massive batch of my new #swee...tpotatobrownies. But I thought for the batch for Ange’s cake I’ll make it into something a little bit #extraspecial....I brewed up a fresh batch of organic espresso coffee, then poured it in with the wet ingredients. Pow! The flavour and texture came out super yum! Ange’s beautiful friend Chase (@slow.food.catering), who I just adore for his creative pazazz, exceptional culinary flare, dashing charm and his #superchill #goodvibes, helped me keep on eye on it while it was baking late at night, and helped me transfer it onto the plate while it was still quite warm without burning myself ....and he had the brilliant idea to serve my vegan choc coco cashew cream frosting in 4 perfect #quinelles on top of the cake surrounded by fresh raspberries and a scattering of cacao nibs and toasted walnuts... yummo!!!! What a decadent saucy succulent sensory brownie experience we all had last night!!! 21.01.2022 Day 5 in Self-Quarantine: I spent today taking a decent break from FB and calls and spent it in beautiful nature here. Also immersed myself in more study and orders. I’m preparing my naturopathic dispensary with a carefully selected range of natural medicines and will start practicing soon by phone/video consult. Feeling a deep calling to step up now and be of service to the community here, for those seeking natural ways to strengthen their immune system and improve their overall health. 17.01.2022 Tonight for dinner I made an Ayurvedic classic, Kitchari! It’s a wonderfully nourishing one-pot dish packed with goodness, protein, nutrients, whole spices and soothing to the digestive tract. Sharing this from my cosy woofers campervan kitchen on a friends property in Tassie where I’m currently spending my 14 day quarantine. It’s been a very intense time suddenly having to pack up and return to my Tassie homeland before the border closure. 8 days in I felt like a warm nouri...shing medicinal dinner and kitchari is the perfect comfort food. 15.01.2022 My vegan gluten-free version of the classic PERSIAN LOVE CAKE FOR MOSSY’s BIRTHDAY last month We all have different predominant love languages, ones that come more naturally. Mine is most definitely touch, acts of kindness/service and if I could add a new category it would be my cakes! They are a perfect outlet to express my love and adoration for my loved ones. No matter if I’m tired or got 3 events on, I somehow still feel fueled with inspiration & creativity to mak...e them a delicious cake! This was a very extra special birthday cake made last month for my dearest friend and soul sister Mel Mossy Wong @a_musings_of_mel. She is one of the most divine humans I know, extremely considerate, deeply caring, patient, the best listener you’d ever meet, sensitive and delicate like the beautiful flower on this cake Yet she’s strong like an ox she’s got the fittest hottest bod and even a six pack! I consider Mossy someone who has high integrity and values, she’s noble and deeply cares for our planet. She teaches me so much on living more sustainably, in fact she teaches me many amazing things that make me such a better human in general. When Mossy loves she loves like no other. She’s one super smart cookie too, can research the best price on anything! She can unfold tractor tyres when other guys can’t, I’ve seen it! She’s my go-to when I need advice or second opinions or how best to navigate a catering dilemma or tricky situation in life. She’s a favourite travel buddy and crazy foodie like me, and I’m so grateful for the countless travel and foodie adventures we have shared these past 5 years. Thank you Mossy for being an incredible friend, soul sister, and solid rock in my life, and for always accepting me as I am, strengths and flaws. Thank you for asking me to bake you a vegan GF Persian Love Cake this birthday and having faith I could pull it off. 09.01.2022 HOW I GET MY SPARK BACK WHEN I’M SICK This is the kind of food as a kid I would remember Ajji (grandma) preparing and would instantly have me feeling revived, nourished and blessed by her love that went in to prepare each of her dishes. Never too oily or spicy, always full of flavour from fragrant fresh herbs and tempered aromatic spices, always balanced with a cooling salad or sprouts and a mix of textures and tastes to awaken the senses. Ajji’s food really was medicine. Ye...sterday I fell sick with a head cold, runny nose,sore throat. Admittedly I’ve been burning the candle again with a lot of catering, fun travels & late nights So yesterday here’s what helped: - brewed a big pot of herbal tea & sipped it throughout the day (steeped thyme, tulsi, catnip, lemongrass, fresh ginger for 10 mins, then added manuka honey and squeeze of lemon). Wonderful for immune boosting, antimicrobial & throat soothing actions, hydration, clearing head, calming mind and moving stagnant energy... - 1 tablet twice daily of Eagle Defence Support (Andrographis, Reishi, zinc, bioflavanoids, Vit C, D, A) - this product is like Armaforce but in my opinion better & more cost-effective, works best at the first sign of a cold. - Fusion Cold & Flu tincture - 5ml 2-3x/day works wonders to ease off the symptoms... must drink plenty of water too - Neti pot cleansing with warm salty water and a little colloidal silver to gently cleanse out my nasal passage. This is a game changer when it comes to sneezing and sinus congestion. - Sleep and naps - this is a hard one for me...I had to really give myself full permission to rest - cooked up this yummy dinner typical of my Maharashtran roots: Simple toor/mung dal with lots of fresh ginger, coriander, curry leaves, mustard seeds and green chilli. Cumin basmati with a little pure ghee potato, beans and cabbage bhaji loaded with fresh garlic/ginger plus tempered cumin/fennel/nigella seeds & curry leaves radish and fresh mint raita made with kefir yoghurt green mango pickle (homemade is best but these days I just use ‘Mother’s recipe’ available from good spice stores) Felt so much better today I was back at work, on my bike and even made it to dance to help move any residual stagnant energy in my body...feeling grateful for my vitality #spoonfulofspark #foodasmedicine #naturalmedicineswork #feelingbetteralready

06.01.2022 This evening I had the great pleasure of attending a talk in Melbourne with one of my foodie heroes, Sandor Katz, author of @Wild Fermentation and a great pioneer in the revival of fermented foods. I first heard about Sandor Katz in 2013 when I volunteered with Michelle and Jarod of Love Probiotics in Guatemala. They taught me loads about fermenting, loaned me his book, and played a big part in my food journey back then. 01.01.2022 Just took a few days for myself in Byron shire to rest up after an amazing weekend at Earth Frequency Festival. My good friend Hal Greenham kindly hosted me at the beautiful Gondwana community house where he stays in Tyagarah, a stunning property near the beach and Mullum As a thank you I cooked the residents up a big #poha feast for 20 which was very much enjoyed Here’s our last minute spontaneous video just before serving... So WHAT’s POHA you ask?? Well it’s basical...ly rice that has been flattened and dehydrated, and when you wet it and cook it up with sautéed onions, veggies and aromatic Ayurvedic spices like mustard seeds, nigella, cumin seeds,lemon juice & salt...the poha fluffs up soaks in all flavours. It’s a typical Maharashtran dish inspired from my childhood breakfasts in Mumbai with my my Ajji (grandma) and Aunties where they’d add fried spicy potatoes, coriander and bhujia. Bonus that it’s gluten-free, vegan and a wonderfully nourishing yummy flavour explosion yet not too heavy, can be eaten any time of day or season, super quick too!
