When that happens, plants often produce specialized compounds that serve diverse roles, including functioning as antioxidants, but also... as so-called antifeedants that discourage insects from feeding on them. These compounds, which broadly fall under the umbrella of phytochemicals, include compounds like resveratrol from grapes or flavonols from tea or anthocyanins from berries. Whats interesting is that these same compounds, as it turns out, often provoke a largely beneficial cellular response in mammals when consumed, activating so-called stress response pathways that do more than protect us from just the mild stressor of the compound themselves, but also boost endogenous cellular responses to numerous other damaging environmental factors, like oxidative stress, UV radiation, even potentially promoting resilience against air pollution, and more.
