24.01.2022 * TURMERIC CAULIFLOWER SAUERKRAUT * Now is a REALLY good time to get into fermented foods if you’re not already. Why? 80% of your immune system is in your ...gut. So that means for your immune system to be healthy - your gut needs to be healthy. Sadly, most of us have gut issues of some sort these days due to lack of good, varied, robust gut flora, eating denatured foods, gluten, dairy, taking antibiotics. Cue Sauerkraut (home made is the best). Just 1/2 cup Sauerkraut gives you approximately 10 trillion good bacteria. THATS A LOT! A good quality standard broad spectrum pro-biotic gets you about 45 billion. It’s SUPER important we are getting a variety of strains in a high count each day. Stress depletes good bacteria, as does staying indoors and spending too much time in cities. Get out into nature as much as possible, and eat your Sauerkraut every day if you want a tip top immune system! And do not wear a mask everywhere unless absolutely necessary. I could go on and on about all the other benefits of eating fermented foods! Ok one more tip, adding powerful foods such as garlic, herbs, ginger, chilli and of course turmeric, only enhances and increases their superfood status and potency in the body as the very nature of fermenting provides maximum bio-availability and is 2.5x stronger than using them the regular way. HERE IS THE RECIPE IN CASE YOU MISSED IT IN THE COMMENTS! <3 This health elixir in a jar is an ESSENTIAL ITEM in your house if you are serious about having a tip top immune system! INGREDIENTS: 1 head green cabbage, pull outer leaves off and set aside, finely shred rest of cabbage 1 head cauliflower, shredded 1 clove garlic, chopped 2t ginger, chopped 2t turmeric powder (or fresh turmeric root - chopped) 2t coriander seeds ground black pepper 2t pink himalayan salt You will need 2 x 1 litre (32oz) mason jars. METHOD: In a bowl, add shredded cabbage. Add 2t pink salt. Massage with clean hands until you can squeeze water out of the cabbage and everything has softened. Add cauliflower, garlic, ginger, coriander seeds, turmeric, pepper and massage until well combined. With a big spoon, spoon mix into mason jars and with a tamper or rolling pin, push down on the mix within the jar so everything is compact, there is no air bubbles and the juice rises to the top. Repeat this process until you reach the shoulder of the jar. With the outer cabbage leaves, cut into strips and roll up, and use these as ‘weights’ to keep the sauerkraut submerged under the brine. Seal the jar with lid, and repeat the process with the other jar. Sit both jars on a plate and place outside somewhere safe and relatively warm if possible. Allow to ferment for 3- 3 weeks. Flavour will progress as fermentation process is extended. If it is summer where you are this will be ready usually within 3 days. In winter it takes 7 days minimum. But really it comes down to taste preference and crunch. Personally I like mine fermented for longer, I like the cabbage texture as it gets softer, and the flavours deepen. 23.01.2022 Sprouting at home Step 2. After soaking over night for approx 8hrs. Simply empty water out and rinse then drain and set aside upside down to continue to drain. Repeat this rinse and drain process 3 times a day (4 in humid areas). I rinse mine breakfast, lunch and dinner. Continue to do this until they have sprouted. Usually about 3 days depending on type of sprout/seed and heat. I bought these sprouting lids but for years I used clean fly screen purchased from hardware ...store and cleaned in boiling water and secured with an estastic band. I buy my sprouts online so I know they're gm free but you can purchase from most Asian grocers. See more

Keep in mind that these studies use a concentrated form of sulforaphane, so the results between this type and that found in ‘fresh’ sprouts may differ. What we do know is that the global interest about the health properties of the production of ‘Sulforaphane’ is gaining much more interest.
