If you are heading to the famous Yala National Park for leopard encounters, expect some scattered showers, which creates a unique atmosphere among nature. Occasional rain makes most parks including Wilpattu and Udawalawe even greener and more picturesque. A nice addition to breakfast these holidays could be Sri Lankan coconut relish - Pol Sambol. Pol Sambol is a much-loved, traditional Sri Lankan dish made of freshly grated coconut. It's tasty, versatile and easy to make.... Years ago, Sri Lankans spent time mixing the ingredients by grinding them on a granite stone (similar to motor and pestle) to get the perfect flavour and texture. Today, it has taken a simple form which can be made by anyone. Here’s our favourite recipe for Pol Sambol from the chef at the property Water Gardens Sigiriya one of our favourite places to stay in Sigiriya, location of Sigiriya Rock Fortress. Ingredients 2 cups grated coconut Dried red chilli to suit your palate Red chilli powder or paprika 1 finely chopped onion 1 chopped tomato 2 teaspoons lemon juice 2 green chillis (remove the seeds for milder version) Salt to taste Method Mix all the ingredients together and add salt to taste.
