Thick Noodles, whether it be a thick spaghetti or hand rolled pasta/noodle is cooked in a Chicken Broth, Served with the Broth and layered with lots of grated Dried Ricotta, Hellim and Dried Mint. Chicken pieces are roasted off until Crispy With Lemon Juice and Black Pepper to taste. #stanbuli

03.01.2022 The Quin(ce)tessential Turkish Dessert. From our opinion, as famous to Turks as Baklava is, AYVA TATLI; Poached Quince and Kaymak- Clotted Cream. Milk cooked out all day until you have a thick luscious cream. Nothing added to it. #stanbuli

01.01.2022 Icli Kofte or Bulgur Kofte. A slightly adjusted recipe after eating our good mates @barzaari for inspiration (their Cypriot version is spectacular) our version is Bulgur, Water and Salt make the shell. Kneaded into a pliable dough that doesnt crack. (Long and Painful process but rewarding) Opened is the technical translation for making the casing by hand- Filled with juicy ground Topside Beef, Onions, Parsley and Black Pepper. Lots of Lemon is all that is required. Shell... as good as you would find. Thin. Crispy. Cooked. The Arab version would have mince in their shell, which creates a softer slightly different texture. Icli Kofte takes a bit more patience to master and we are pretty proud of this recipe. #stanbuli
