15.01.2022 Redressing stones today. It actually doesn’t take that long. Getting the bloody mill out of the room, apart and back together...that’s another story I’m not willing to share here. I had a moment when I thought maybe I should just buy in the flour (not there’s anything wrong with that!) after all it’s a national holiday here and my day off and it’s 27 degrees outside and most normal people are out enjoying the Australian weather. Then I set it up loaded with @whispering_pines..._organics rye, turned it on and the smell of freshly milled flour filled the air and my 20 gallon tub. It’s a drug and it’s the shit! Its soo alive and when you feed a Levain with warm flour and watch it explode into life it’s a game changer. I’ve learnt a lot today about the @newamericanstonemills and it’s brilliant engineering, I’ve also learnt a few things about myself too. @smallworldbakery @backdoorbread @millerbakerjames @berkelo.au @danthebakerdownunder @millerandbaker @graisongill @bellegardebakery @oakandswan_sourdough @wsu_bread_lab @newamericanstonemills @believe_in_dustiny I’d like to share more of our milling experiences.
