25.01.2022 52 Weeks of Healthy Swaps. Week 43: swap cheeses marinated in industrial seed oils with cheeses marinated in olive oil, or brine. In week 3 of this series #52weeksofhealthyswaps I discussed the dangers of industrial seed oils. Sadly many cheeses, even organic ones like the one pictured, are marinated in seed oils (eg canola oil) even though they will explicitly say on the front marinated in olive oil. A careful read of the ingredients on the back (swipe left) shows canola o...il listed as the second ingredient. Why do they marinate cheeses in canola oil? Firstly because it’s cheap. Secondly because from an aesthetic point of view olive oil alone solidifies in the jar making the product look cloudy and less attractive for sale. Hot tip # 1: if a refrigerated product containing oil doesn’t cloud chances are it contains canola oil! Hot tip # 2: just because a product is certified organic doesn’t mean it’s clean and doesn’t absolve you from reading the ingredients list. If you want to marinate cheese best you buy the cheese in a block or in brine and marinate it yourself at home in quality extra virgin cold pressed olive oil like @grampiansoliveco sold at Broth Bar & Larder.

17.01.2022 52 Weeks of Healthy Swaps. Week 40: swap raw leafy greens with cooked leafy greens. Green leafy vegetables like kale, spinach, rainbow chard, collard greens and silverbeet contain oxalates and other naturally occurring anti-nutrients that bind minerals in them making them unavailable to be absorbed and properly digested. ... Cooking (eg sautéing or steaming) reduces these anti-nutrients thus making the nutrients in them more bio available. This proper preparation of leafy greens maximises nutrient-density and minimises anti-nutrients. This is how important proper preparation of our food is along with ensuring it is properly sourced and as unprocessed as possible. (Sourcing, processing and preparation are 3 factors that profoundly impact the nutritional value of our food). This is why I’m not a fan of green smoothies that contain raw leafy greens. (Note our frozen beef broth & spinach cubes contain COOKED spinach). My favourite way of eating spinach, rainbow chard, collard greens and silverbeet: sauté them in butter with diced garlic, covered, until tender, season with unrefined salt and pepper, drench with a squeeze of lemon juice, and top shaved Reggio. Note: lettuce, rocket and fresh herbs don’t needs to be cooked. I’m not concerned with the occasional or sporadic consumption of raw kale, spinach, rainbow chard, collard greens and silverbeet if you have a robust digestive system. It’s more the daily or regular consumption of them in their raw form that can be problematic.

I always taught my kids to listen to their intuition, and to reap the consequences of their actions for better or for worse. A fabulous book that I read when my kids were young that had a profound impact on my parenting (and the shortcomings of helicopter parenting and micromanaging our children’s choices) is The ...Continuum Concept by Jan Leidloff. I highly recommend this book to all my clients who are mamas to be or parents of young kids. There’s no right or wrong, good or bad, just cause and effect. For example, if you eat this food, this is the outcome and if you eat that food that that’s the outcome. As they get older the challenge for me is to give them greater choices, stand back and watch them make ‘interesting’ decisions, allow them to learn from those decisions, and always be there to provide a soft landing. 08.01.2022 One mistake many people make (and who can blame them) is to assume that if something is certified organic then surely it must not only be safe but actually healthy. Sadly not. You can buy certified organic canola oil or caster sugar. Just because something is ‘certified’ doesn’t mean you’re liberated from reading the ingredients listing. In fact the THE ONLY thing I read on anything packeted, jarred or bottled are the words that come after the word ingredients. Ignore all... the slick sexy marketing fluff on the front, and all the green washed words of organic natural eco botanical healthy enviro etc. Conversely there’s numerous products and food I buy, recommend and trust that ISN’T certified organic because the farmer or producer hasn’t gone to the trouble or expense of certification. Eg grass fed and finished meat, wild fish, unrefined salt, raw dairy, and @youngliving products are not technically certified organic but they are most certainly the high water mark in their field. About 7 years ago I wrote a blog post on is certification necessary because I saw soooo many people hanging their hat on certification as the gold standard. For some products it is very helpful (eg chickens and products from chickens eg livers) but for packeted products there is NO substitute for still reading the ingredients and asking is this in substance organic? Are the ingredients grown or reared the way nature intended? Would my great great grandmother have recognised it? Did the ingredients naturally occur from planet earth and have they in any way been processed to strip away natural goodness and add in any toxins eg pesticides, colours, flavours, preservatives, additives, GMO? If they contain grains, legumes, seeds and nuts have they been properly prepared through soaking, sprouting and fermenting eg activating the nuts/seeds, leavening the wheat to make sourdough. 06.01.2022 One way to deal with dark or destructive consciousness is to have the courage to see it, shine light on it and in doing so dissolve it. As humans it is normal and natural to feel all the emotions including anger, rage and sadness in response to an observation that is shocking, dark or disturbing. Once you observe it and allow yourself to sit with the emotion and feel all the feels without judgement, our job is to then CHOOSE to emit love, light and compassion. That’s all we need to do. 04.01.2022 My 2 hacks for omelettes: 1. Process roughly chopped gruyere (or other full fat) cheese with eggs in a food processor until well mixed to save grating cheese on top of omelette; and 2. After underside is cooked for a few minutes on stove stop transfer the frying pan to a heat grill element in oven to brown the top side to save you the messy hassle of trying to flip or fold it in pan. I have eggs most days- sometimes fried, sometimes in omelettes, sometimes boiled, sometim...es poached, sometimes scrambled and sometimes some sneaky a couple egg yolks make it into my smoothies. Some days are completely egg free. It’s always good to mix things up to keep the body on its toes.
