25.01.2022 Zucchini and Cacao Brownies SerIously the BEST and most delicious brownies I’ve ever made! Fudgy and made healthy with sneaky veggies, whole wheat flour and no refined sugar. Ingredients: 2 cups zucchini, medium size hole shredded (not tightly packed)... 1 large free-range egg 1/2 cup coconut oil, melted 1/2 cup maple syrup, honey or any liquid sweetener 1 tsp pure vanilla extract 1/2 cup cacao (or cocoa powder) 1 1/2 tsp baking soda 1/2 tsp salt 1 cup organic whole wheat or spelt flour Instructions: Place zucchini in a colander while you are getting other ingredients ready. Preheat oven to 180 degrees and line 8 x 8 baking dish with unbleached baking paper. In a large bowl, add egg, oil, maple syrup and pure vanilla extract; whisk to combine. Add cacao powder, baking soda and salt; whisk until well mixed. Give zucchini a gentle squeeze but do not ring out completely, add to a bowl and stir. Add flour and mix gently until combined. Transfer batter into prepared baking dish and level with spatula. Bake for 25-28 minutes or until the centre is barely jiggly. Do not over bake as brownies will have more of a cake consistency. A toothpick inserted has to come out somewhat not clean. If centre is too jiggly bake a bit more ovens vary. Remove from the oven and let cool for about an hour. Lift by the baking paper flaps and transfer to a cooling rack to cool off completely. Cut into 16 squares. Store 1st day: Brownies become fudgier the next day, especially if stored cut up and separated or refrigerated. I left them on a plate covered with kitchen towel on a bench overnight. We love aroma-dough . . Ingredients: 2 cups plain flour 1 cup salt... 1 tbs oil 1 cup cold water 2 drops liquid food colouring 3 drops of essential oil of your choice . Method: Combine plain flour and salt. Add water, food colouring and oil. Mix until ingredients are combined. Knead well. Add a few drops of essential oil and knead more. 19.01.2022 Today is #worldmentalhealthday2020 and mental health is something we will all consciously or subconsciously be affected by, at some point in our lives... the more I communicate with people throughout my life, the more I am aware of just how many others are struggling or have had past struggles. Struggling is not a sign of emotional weakness. To admit that you are struggling in this fast paced and somewhat overwhelming society, is the complete opposite. It shows bravery. It... shows vulnerability. It shows you are human. I often perceive myself as a burden for being ‘too emotional’ at times and for communicating how I feel a lot and not always having the right timing when I do! The truth is, sometimes we need that extra bit of support. We need someone to simply be there. 18.01.2022 Any easy, tasty and sneaky way to get your kids used to brown rice or quinoa is to mix it half/half with white basmati rice. That’s what I did and still do sometimes if I feel less patient than usual And sometimes I just feel like regular basmati rice but I know that brown rice or quinoa is way better for me, so mixing them gives you the best of both worlds! This pic has a third each of each mentioned and is my fave tasting. This is just a pre-made packet from Coles (Passage to India) with no preservatives in it and it is delish! 08.01.2022 Double Choc Cacao & Buckwheat Mini Muffins ~ These little fellas are decadent, moist and healthy! Cacao is high in magnesium and rich in iron, buckwheat is high in fibre, protein & gluten-free. Perfect for lunch box treats or with your afternoon cuppa . INGREDIENTS 2 cups buckwheat flour (or 1 cup each of buckwheat & plain flours)... 2 teaspoons baking powder 1/2 teaspoon baking soda 3/4 cup organic cacao powder 1/2 cup brown sugar 1/2 cup coconut sugar 115gm 1/2 cup butter 1 teaspoon vanilla extract 2 large eggs 1 cup almond or coconut milk 1/4 cup boiling water 1 cup dark chocolate chips INSTRUCTIONS Preheat oven to 200 C standard / 180 C fan-forced. Grease a 24-hole muffin pan well with butter or line with cupcake cups. In a large mixing bowl, sift flour, baking powder, baking soda and cacao. Add sugars and mix together with a wooden spoon. Using the microwave, heat butter until just melted, stirring every 15 seconds. Remove the butter and set aside to cool slightly. Meanwhile turn the kettle on and pour out 1/4 cup of boiling water and set aside. Next, add vanilla, eggs and milk to your cooled butter and whisk gently until combined. Make a well in the middle of the dry ingredients, add the wet ingredients and begin to fold. Throw in the chocolate chips. Gently mix using a spatula or wooden spoon and then pour in the hot water. Fold until the mixture is just combined be careful not to over mix. Spoon batter into your muffin pan the holes will be quite full. Bake for 5 minutes until a knife inserted into the middle comes out clean or they bounce back when touched lightly. Plus they’re super easy Perfect to make ahead, lunchbox treats or for on-the-go healthy snacks. . Ingredients: 1 + cups muesli or oats ... 1/2 cup desiccated coconut 1/2 cup pumpkin & pepita seeds (optional) 1 tbls chia seeds 2 tbls LSA, ground 1 apple, grated 1 tbls honey or 2 tsp stevia 1 tsp cinnamon 3 whole free range eggs 1/8 cup virgin coconut oil, melted 3 tbls plant-based milk . Instructions: Preheat oven to 180 degrees celsius. Line a baking tray with baking paper. Whisk eggs in a mixing bowl. Add in all other ingredients and mix to combine. Spoon 12 golf ball size spoonfuls into your hand and roll into a ball. Place on lined baking tray and lightly press down to a cookie shape. Continue with the rest of the mix. 02.01.2022 We’ve had a family of 5 all coming down with something over the past 10 days so this healing Miso Soup is needed! Miso is incredibly nutritious; rich in essential minerals and a good source of various B vitamins, vitamins E, K and folic acid. As a fermented food, miso provides the gut with beneficial bacteria that help us to stay healthy, vibrant and happy; good gut health is known to be linked to our overall mental and physical wellness, providing a stronger immune system.... . INGREDIENTS 1/4 cup miso paste 1 tablespoon toasted sesame oil 2 teaspoons freshly grated ginger 2 cloves of finely chopped garlic 1 tablespoon coconut oil (or olive oil) 2 cups of chopped veggies of your choice (I used capsicum, mushroom, carrot, zucchini, broccoli, cauliflower & cabbage) 4 cups low-sodium vegetable broth (or water) 2 tablespoons tamari (gluten-free soy sauce) 1 Tblsp Grass-fed Collagen (supports digestion & heals the gut) - optional. 1 pkt of Sweet Potato Noodles - optional . INSTRUCTIONS In a small bowl, stir together the miso, sesame oil, and ginger. Set it aside. Melt the coconut oil or olive oil in a large saucepan over medium-high heat. Stir in the vegetables and cook until softened, about 5 minutes. Add the broth and bring it to a simmer. Add sweet potato noodles. Partially cover the pan and cook for 10 minutes, then turn off the heat. Add in the cabbage right away so it can begin to wilt, then scoop out 1/2 cup of broth to add to the miso mixture. Whisk the miso until smooth, then add it into the pot of soup, along with the tamari. Taste and adjust any seasoning to your liking, then serve warm. This soup is best served the day it's made, but you can store it for up to 4 days in the fridge. (Reheating may destroy some of the probiotics in miso, but it still tastes good!) Sweet Potato Noodles are made from sweet potato starch. These noodles are naturally fat free, low in calories and lower in carbs then regular wheat noodles, making them a healthy choice for noodle lovers.
