23.01.2022 A fascinating article on the efforts to connect breadmaking to the grain (h/t Wade Kelly). We might have to investigate getting in a small scale flour mill (yeah thanks, like we want more work). 18.01.2022 Intellectually interesting, I guess. But it's bread in the end. It really doesn't do to fetishise it. And the einkorn grown today is still not the einkorn from 4500 years ago. Nor is the water the same, or the ambient micro-organisms that would have played a part in developing the levain he recreated from ancient yeast relics.

13.01.2022 Okay, our first post on bread/pastry in France this year. In Auxerre, where we arrived in our little boat yesterday... The marvellous Maison Eric Roy, Boulanger/Patissier. We came, we saw, we tasted.... and got a few aspirational ideas.

12.01.2022 Yesterday we celebrated our last bake for the season with a record number of pre-orders... so many in fact, that we had no flour left to bake bread for sale from our market stall. Thank you to all our lovely customers, you make our lives joyful. We will think of you as we travel the canals and rivers, the boulangeries and patisseries of France. We look forward to seeing each and every one of you again in the Spring.

Plus absolutely stoked to be supplying our bread and pastries to Sam and Booja, our wonderful friends at Adelong Foodworks!

03.01.2022 Arrived in Vincelles today and got excited.... Saw a mill across the river. Jumped on the bike to investigate. Found an operating mill but works with electricity, not water power, and with steel roller mills, not stone or wood, and with standard local grains, not organic or sustainable. All the same, nice to see a small independent miller with a strong focus on its customers. We love our miller of choice.... @WholegrainMilling of Gunnedah.
