21.01.2022 Delicious Lemon Curd 5 lemons (zest and juice) 250g sugar 120g butter, room temperature 6 eggs... In a medium sized bowl, whisk the eggs, sugar, lemon zest and juice until just combined. Add the butter. In a medium sized saucepan add two cups of water and bring to the boil. Place the bowl on top of the saucepan and whisk slowly until the butter has melted and been completely incorporated. Bring the curd to 80c. Take it off the double boiler and continue to whisk for a further 4-5 minutes to help cool. Place it in a sterilized jar or container and place in the refrigerator until cool.

18.01.2022 Sunday Piklets 1 cup self-raising flour tsp baking powder 2 tbs sugar... cup milk 1 tsp white vinegar 1 egg 1 tbs melted butter Mix flour, baking powder and sugar. Beat egg well and add to mixture of milk and vinegar. Mix together with flour and add melted butter. Heat your pan and add a tablespoon of butter. Let melt and add tablespoons of batter to your pan. Let cook for 2-3minutes and turn. Cook until golden in colour.
