24.01.2022 Thanks for everyone’s support and patience today. From all the advice we’ve been given from the Australian Meat Industry Council we are clear to stay open. Same as last lockdown we advise you don’t beat the rush by coming in the morning, we don’t do a night fill, we produce fresh products during the day and right now the display is empty But, on a positive note..... the beef this week is close to the best we’ve had all year, so you can iso in style. ... We will have no problems with our supply of all our range, so don’t stress. (Leave the stress to me). Thanks again, stay safe and look after each other Chris and Giselle

24.01.2022 We will be closed this Sunday unfortunately. The last 10 days have been madness for us and its simply not sustainable. All of us are fatigued beyond belief and in an environment like our shop this becomes very dangerous. We all need some time to see our families and rest up to be back on Monday. We will be open our normal trading hours of 7am-5pm Saturday. Im sorry for the regular Sunday shoppers that will be affected by this. ... Thanks and stay safe and patient. 22.01.2022 Calling All Fund Raisers for Fire Relief We would like to donate sausages to any organisations trying to raise money for fire relief. We have in total 150KG (approx 1800) of sausages we would like to donate for this purpose.... Please DM me with your fund raising cause and idea. Sausages are for this weekend pick up and due to the volume, the bigger your idea the more snags you could snap up.

22.01.2022 See how happy Jake is to have a break. please dont panic about meat over the next few days. Im aware some more changes have been made today regarding the virus but we will still trade as per normal. All our meat is locally grown and as youve possibly been reminded this week its all manufactured in store. All our products take time and care and hence thats why they taste like theyre supposed to taste. If you cant see it in the display cabinet please ask if we can make it for you. If we all stay calm we will all get what we need. We cant employ more staff on short notice and train them in time so be patient with the team we have. 22.01.2022 Heres an update on what we see from our side....... 1- using pay wave to remain contactless and then accepting the receipt 2- social distancing away from our counter and then barging to the front when its their turn... 3- removing your mask to speak to our staff 4- constantly touching their mouth and nose with latex or gardening gloves and even Woolworths plastic bags as gloves. 5- the vulnerable aged people shopping daily and sometimes twice daily Sorry had to share this as it keeps us amused through this madness. 21.01.2022 Dan cooked up some of our american pork spare ribs today. Smoked for 3 hours and then marinated and wrapped in foil and cooked for a further 2 hours. They just fall off the bone! If you haven't, you must try them!

21.01.2022 Hi everyone, at the moment we are experiencing something that most of us have never encountered before. We can appreciate that some customers are nervous and are beginning to stockpile meat. If you feel this is needed for you and your family consider placing an order. I promise you that we fulfill your order. By not ordering you are wiping us out of stock and leaving nothing for the customers trying to do their weekly shop. Please understand that we have the same amount of st...aff and have tried our best to meet the demands but cannot physically keep up. From me personally this reflects badly on my business as we look like we dont have want customers want. To put the sales into perspective, we have exceeded a normal week in sales in 5 days not 7 and sold more today (Saturday) than we normally would over the whole weekend. After all that all Im asking is be considerate to others and order if you want bulk so no one has to put themselves through eating supermarket meat. Thank you so much for your support and stay safe. 20.01.2022 Incase you didnt know, this is beef shin ( otherwise known as Osso Bucco ). The photo is really just for attention . We have a small ad in the local paper, The Courier, tomorrow and part of the process of the ad was realising that Giselle and I have owned the business for 15 years!!! We have always appreciated the feedback and support from our customers and believe that is why our shop has been so successful. Having said that..... we dont always know what customers like to see available in the display cabinet. We are offering a $100 voucher to the best new idea for the display cabinet. 19.01.2022 Evening everyone. Just an update on whats going on. We have sold 7 days of meat in 3 days. Please understand we only have the staff we have and these legends are starting early, finishing late and eating their lunch on the run. Today we were blown away by the generosity of some of our customers who gave us coffee, cibo vouchers, chocolates and beer!! Onto the meat now..... I cant see beef being a problem as weve brought forward our delivery. ( understand this is hard as ...even the growers in Wistow this week had to change their schedules to accommodate this ) so red meat will be a plenty if you cant see it in the window please ask and we will cut it for you. Mince meat or mints meat as I saw it called this week,we will make more than you can imagine(1100kgs in the last 6 days is what weve sold) and we have the ability and meat to make that again. Lamb should be no problem but lamb is the most labour intensive meat we sell so we may not have it on display but we can cut it. Pork....... no dramas. Bacon may run short but we will be cooking on Friday or Saturday depending on the curing time. Chicken....... this is the main problem. As we get daily deliveries we can keep you updated but weve been told our order is halved tomorrow. Not cool but what can you do? Like I said its daily so it can hopefully be rectified 24 hours later. For the record we sold 500kgs of chicken on Tuesday Sausages and burgers we are trying to produce. Please understand these are all hand made and mixed which takes care and time. We refuse to lower our standards to mass produce these products so they will appear and disappear over the next few days Id imagine. Hope this helps?? 19.01.2022 After last weeks beef short ribs cook, we thought we better follow it up by doing a Cape Grim brisket... Rubbed in a combination of Smoky Pastures Risk it and Sweet Dreams and smoked with Pecan in Daniels pellet smoker for 10 hours. Cue food coma!!

17.01.2022 So ..... after what could only be described as an amazingly out of control week we need your patience. (That was the biggest week of trade we have ever had outside of Xmas ) We sold out of so many products and will be trying our best to restock as quick as possible. Given all our products are made in store we may take a couple days to get all of our 150 different lines back on display. Thanks to you all for your support.

14.01.2022 After watching people remove their masks to talk, lick their fingers and even sneeze into their hands prior to paying with cash and cards, we have decided to minimise our exposure. After being warned by the police regarding our non use of the masks this evening (which we weren’t wearing because we were told by a police person this morning it’s recommended and not mandatory) that we would be fined a lot of money. Based on these factors, our trading hours will change for t...he next few days until the mask rules are lifted. As of Tomorrow 20th November 2020 our trading hours will be as follows: Friday 9-3 Saturday 8-2 Sunday closed (church day) Monday 9-3 Tuesday 9-3.

11.01.2022 Hi everyone, hope your all ok? We are starting to get our full range back on display so thank you very much for your patience. Giselle and I are looking into our options for the coming months including deliveries. Our first priority is our staff and their families and ensuring they have employment through what is ahead. We have been blown away by our local communitys support and thank you all so much. But Im calling on a favour..... Im not sure if youve noticed all the ...shops in Stirling that support your kids footy, soccer, netball, kindergartens, dance and theatre groups and so on? The supermarkets dont. And if they do.... trust me its for their benefit. Think local and support any one you can and remember theyve more than likely supported you or your family directly or indirectly. We all have a choice and that choice can make a huge difference in a time like this. Keep Stirling independent and not a sea of big business and franchises in the future. 10.01.2022 Evening all... At the moment we are tackling the issue of supplying you all with our products as well as keeping our selves safe. Over the coming weeks we may have to make some adjustments to our trading hours to reduce the risk to our staff and their families. At the moment we are open for 75hours per week. As it stands we need all our staff working to be able to serve you and stock the display which then makes Sunday trade not viable because of the penalty rates for the st...aff (its all double time pay). 10.01.2022 Help help help!!! Amazingly (or possibly not) we always struggle to find a new apprentice. We need your help please. Can you share this opportunity for someone to contact us? Age and gender is no reason to not apply. Butchers are one of the oldest trades around and will always be required in the work force, which has just been proven during COVID-19. We cant be replaced by robots or machines so there will always be employment for us. This is a fantastic opportunity for anybody to learn a trade with a fantastic bunch of people (with fantastic customers )and be taught the trade in the traditional way. 05.01.2022 After our recent low 'n' slow bbq additions to our shop, We have now dropped our standing prices on the cape grim short ribs to $21.99kg and the brisket to $13....99kg We also have a decent range of rubs, sauces, smoking woods, pellets and briquettes. And dont forget we also process our own beef from the carcass so most cuts are available all the time. Feel free to request anything we dont have. Thats the perks of going to a butcher shop!! Not only does Lois make these for us at Christmas time, but she regularly drops off her delicious biscuits to all the staff and to our kids too throughout the year. 05.01.2022 We have finally entered the world of low and slow cooking. low and slow is a growing passion and we want to support it. Given that it requires particular cuts of meat we have to buy extra portions of those cuts. (Briskets, short ribs and so on). We will only stock the best brands to compliment our own beef that we sell all year round. Cape Grim from Tasmania has the best reputation from what weve researched. Along with this is an amazing range of rubs, sauces, smoking woods, pellets and briquettes. Again we will only stock the best and as locally produced as possible. Feel free to let us know what youd like to see available and we will do our best to make it happen.

04.01.2022 R.I.P John Holland. John is Almond Grove free range turkeys. I’ve been dealing with John for 15 years and every year he has never let us down once. John would work night and day to ensure all his deliveries were made. He was always good for a laugh and loved dealing with Dan for that reason. John passed away last night. His family has made sure that this Christmas we all still get our orders ( something I know I’d struggle to do under the circumstances). If you’ve order a turkey from us this year then please raise a glass to a true south Aussie gentleman. Thanks and stay safe, Chris.
