17.01.2022 Octopus Salami This Smoked Octopus Salami is by far one of the most unique and impressive creations we have seen at Stoney the Fishmonger. As you can see in the pictures below it was quite a process to go through to get to that impressive end product, but of course its always worth it when you can create the perfect dish. This amazing process took Octopus tentacles all the way to a Carpaccio of Smoked Octopus Salami.... 15.01.2022 New Huon Ocean trout People often ask us "Whats the difference between Huon Salmon & Huon Ocean Trout?" Wellquite a lot actually! You only need to look at this comparison image to see the two species differ quite significantly in appearance. However, the differences arent just Skin Deep Huon Ocean Trout has a more pink flesh than Huon Salmon (similar to the pink streak on their skin). Most importantly, Huon Ocean Trout is renowned for its rich texture and adaptable... flavour profile, making it a favourite among foodies. Similar to the lifecycle of Atlantic Salmon, Huon Trout start their life in freshwater (at this stage they are referred to as Rainbow Trout), and once they are exposed to saltwater, they become Huon Ocean Trout.
