01.01.2022 Shout out to @coffeeselectorsau We are very excited to be included in the most recent collection, Hobart City Choice Straight Up / Wingman // The story behind this great roast from Tasmania and Coffee Selectors’ first female roaster is a celebration of Aussie Gal Power and the result of a well timed bet that paid off handsomely. ... Straight Up’s Roaster is Chicko Mackeen who started her coffee career at 17 for award-winning cafe roaster at Danes in Deewhy on Sydney’s northern beaches and returned to Hobart with her Chef partner, Jess six and a half years ago with plans to open a vegetarian, gluten free Cafe which quickly morphed to include a roastery and bakery as a result of a bet. ‘Jess bet me to roast coffee and I bet her to make gluten free bread.’ The challenge was on! And Wingman was born. 'I bought myself a roaster and allowed my palate to lead the way. Her self taught roasting style - led uniquely by her palate - resulted in The Wingman which she created from first picking out the flavours, and the beans second. I distinctly knew the flavour profile of what I wanted,’ said Chicko. ‘My signature blend had to represent me - and everything I personally wanted in a cup of coffee - chocolate, honeycomb with hints of spritzy notes.' A blend of Brazilian and Ethiopian sustainably sourced beans created the winning flavour. Breaking into a traditional man’s coffee roasting world is not for the faint hearted woman, but encouragingly Australia’s coffee scene has produced a few of the best and highly respected female coffee roasters on the domestic and international scene. We’re adding Chicko Mackeen to that list. Her advice to budding female wannabe roasters? Don’t be scared to ask questions, challenge yourself explore the boundaries of roasting coffee - and don’t be scared of the science. Embrace it all.'
