17.01.2022 I love trying new recipes, and changing them to suit myself. Recently, I picked up one of those free recipe magazines from Woolworths and found a ‘reader recipe’ for a Cashew and Date Slice that I thought looked good. It had won the contributor $100, so it had to be good, right? Unfortunately, the recipe wasn’t gluten free, so by changing the flour for a gluten free blend, and the oats for flaked quinoa, that was fixed. But I thought to myself, ‘Why not vegan as well?’ So, I... changed the honey for golden syrup, and voila, vegan. I omitted the melted chocolate on top of the original to keep it healthier and in keeping with its new vegan status. I had to read between the lines a little bit for the instructions, and cooked it a bit longer, as it just didn’t look cooked after the specified time. Oh, and it tasted good too. 08.01.2022 Yesterday my daughters father in law gave me some limes, which made my dessert for our weekly dinner with our neighbours Toni and Stuart, a lime meringue pie. Many years ago my mother gave me a recipe book that had a very different take on a lemon meringue pie recipe, and so I just replaced the lemon with lime. My gluten free pastry is an adaption of a recipe given to me by another friend who used to have a gluten free cooking school, and as usual, gave amazing results. Many many years ago, I used this recipe to make lemon meringue pies for a brother-in-law who conducted an open air restaurant during Warana festival in Brisbane. So many memories , and a delicious and very light result. I’ll try to get this recipe in the website in the next few days, family duties permitting.
07.01.2022 Who loves Porcupines? I know I do, and so do all my daughters. The biggest issue with making them though is finding a tomato soup that’s gluten free. I used one today that listed maize flour and xanthan gum as the thickeners, so I should be ok. I’m serving these tonight with ash made with a combination of potato and sweet potato, plus some steamed cauliflower, broccoli and snow peas. 04.01.2022 I absolutely love my slow cooker at this time of year, and I think I’ve been using it about 4 times a week since we moved. Today I had only about an hours notice that I needed to go out for most of the afternoon, and had luckily thawed some chicken thigh fillets, but hadn’t decided what to do with them. Into the slow cooker they went, with half a cup of water, a third of a cup of brown sugar, a quarter cup of gluten free soy sauce and a teaspoon each of crushed garlic a and corn flour. I left it on low for about 6 hours, then shredded the chicken and added some cooked cauliflower, broccoli and carrot sticks, then served it over some long grain rice. Such an easy and delicious meal, I’m sure I’ll be making it more often in future.

03.01.2022 I was looking for a super easy Sunday evening dinner, ans scrolling through Pinterest, I found a recipe from Garden & Table for a Chicken Mozzarella Pasta with sundried tomatoes that sounded easy and delicious. As I had some bacon in the fridge, I added that, and the pasta is Otway Pasta fusilli. This will definitely feature again on our dining table. #glutenfree #glutenfreepasta #glutenfreedinnerideas
02.01.2022 Not quite baking, but definitely gluten free. We had a visit from our old neighbor Kristy this week, and she brought me some limes and Bush lemons from her trees, as well as a huge pumpkin, but more about that later. Those 4 little limes and half a dozen tiny lemons made over 3 jars of marmalade, so enough to last most of winter. #glutenfree #jammaker #citrus #marmalade #homemade
01.01.2022 I don’t often make anything that isn’t gluten free, but I made an exception today and made a lime cheesecake for my son-in-law’s birthday tomorrow. The only ingredient that has gluten, of course, are the Arnotts Biscuits Nice biscuits in the crust, which has to be made with real butter. One of my lovely new neighbours gave me the limes, and the recipe; that’s a family secret, given to me by the original Margaret Woodcraft. #cheesecake #notglutenfreetgistime
