10.01.2022 RECIPE FOR FLOURLESS CHOCOLATE RASPBERRY BV CAKE.......yummy! Ingredients 1 1/2 cup packed almond meal* 1/2 cup cocoa powder... 1/2 cup YIAH Black Forest Dukkah 1/2 tsp baking soda pinch salt 1 1/2 cup packed pitted dates ** 1/2 cup water 1/2 cup YIAH Raspberry Chocolate Caramelised Balsamic Vinegar 3 eggs 2 tbsp coconut oil 2 tsp vanilla Instructions: Preheat oven to 325. Mix together all dry ingredients (almond meal, cocoa powder, Dukkah, baking soda and salt) in a bowl and set aside. Place the dates and water in a food processor or strong blender and blend until it forms a smooth paste. Mix the date paste with the wet ingredients (eggs, Balsamic Vinegar, coconut oil, vanilla), and mix until smooth. Add the wet to the dry and stir until smooth. Grease and 8 round cake pan, and pour in batter. Bake for 25-30 minutes, or until a toothpick comes out clean. Let cool for at least 10-15 minutes before serving before serving so it has time to set. Icing: 1 cup of good quality salted butter, room temperature 3 teaspoons of vanilla 4 cups of icing sugar 3-4 tablespoons of coffee cream (18% and up) or whipping cream 1/4 cup fresh raspberries Place butter into mixer and whip butter until it's creamy and fluffy. Add in the icing sugar, one cup at a time, beating in completely, until all 4 cups are combined. Add in the vanilla and whip again to combine. Add in your cream, less cream = stiffer icing. More cream - fluffier icing. Fold in the raspberries. Place the icing back in the fridge for 10 minutes. Cut the cake in half through the middle. Add a layer of frosting, then place the top of the cake back on. Frost the cake all around. Drizzle extra Raspberry Chocolate Caramelised Balsamic just before serving. See more
