22.01.2022 What started out as a ‘learning to make whisky’ trip to Scotland, turned into a fascination with gin when I visited Dunnet bay Distillery. Located on the iconic northern tip of Scotland where they have their own herb garden, I sampled their Rock Rose Gin and was blown away by its complexity. By the time I ended up in Amsterdam on World Gin Day, I was in love with Gin! After studying the various European techniques for making Gin, I attended a gin school in New York where I le...arned the fine art of combining botanicals and distillation. My teachers were from Cornwall, the Virgin Islands, The Netherlands and New York and generously shared their knowledge. I spent another year developing my gin recipe and was excited about releasing it when the dreaded COVID-19 turned everyone’s world upside down.
