12.01.2022 Rum, Caramelised Pineapple and Passionfruit Punch Ingredients: cup honey... 1 ripe pineapple 2 cups dark rum Ice cubes 1.5L ginger beer Mint sprigs and half passionfruit to serve Method: 1. Place honey in a large frypan over medium heat and bring to a simmer for 2-3 minutes or until lightly caramelised. Add pineapple and cook, stirring occasionally, for 15 minutes or until lightly caramelised. Cool completely, then place in blender with rum and whiz to a puree. 2. Fill a punchbowl with ice. Strain pineapple puree through a fine sieve into punchbowl and stir through ginger beer. 3. Garnish with mint and passionfruit. #drink #freshdrink #pineapple #summerdrink #sunburyprovidores
12.01.2022 Recipe - Lemon & Herb Roast Chicken Ingredients: cup coarsely chopped flat-leaf parsley... 2 tbsp dill, coarsely chopped 2 tbsp tarragon, coarsely chopped 12 sprigs thyme 1 preserved lemon soak in water to remove excess salt 35 gm ( cup) fresh breadcrumbs 60 gm unsalted butter, coarsely chopped Salt Cracked black pepper 1 whole chicken 50 ml olive oil Method: 1. Preheat your oven to 180C. Use a food processor to roughly chop herbs, preserved lemon, breadcrumbs and 40 grams of butter in a food processor, scraping down sides occasionally, until well combined. 2. Starting from the neck end, gently separate the skin from breast of chicken by running your fingers under skin, keeping it intact. You should be left with a pocket running the full length of each breast. Spread herb butter onto breasts under the skin and massage to create an even layer. Place chicken in a roasting pan, and pour over the olive oil, spreading it evenly, and season with salt. Dot with remaining butter and roast, basting every 15 minutes until skin is golden and juices run clear when a thigh is pierced with a skewer (1-1 hours). Rest for 5-30 minutes before carving. 3. 11.01.2022 Pumpkin, Quinoa, Goat's cheese and Pomegranate Salad IINGREDIENTS: butternut pumpkin diced... 1 red onion, cut into wedges 1 tbsp olive oil 200 gm (1 cup) quinoa 1 cup coarsely chopped coriander 1 cup coarsely chopped mint 2 tbsp sunflower seeds Seeds from pomegranate Juice of 1 lemon 60 ml ( cup) extra-virgin olive oil 100 gm goat's cheese METHOD: 1. Preheat oven to 220C. Scatter pumpkin and onion on a roasting tray, drizzle with oil, season to taste and roast until caramelised (20 minutes). 2. Cook quinoa in a saucepan of boiling salted water until tender (10-15 minutes), then drain and set aside in a sieve to drain completely. 3. Combine remaining ingredients except cheese in a bowl, add roasted pumpkin, onion and quinoa and toss to combine. 10.01.2022 Pavlova with Mixed Berries & Pistachio INGREDIENTS: 165g ( cup) caster sugar... 165g ( cup) raw caster sugar 225g (about 6) egg whites 1 tsp white vinegar 20g finely chopped pistachio nuts, plus extra coarsely chopped, to serve 1 tsp cornflour Raspberries and sliced strawberries, to serve Edible flowers (optional), to serve Raspberry ripple cream 125g (about 1 punnet) raspberries 2 tbsp pure icing sugar 600 ml pouring cream 300g (1 cups) crème fraîche METHOD: 1. Preheat oven to 150C. Trace a 16cm-diameter circle on each of 3 separate pieces of baking paper. Place pencil-side down on lightly oiled baking trays. Whisk egg whites and a pinch of salt in an electric mixer to soft peaks (4-5 minutes), then, with motor running, gradually add sugars and whisk until firm and glossy (2-3 minutes). Whisk in vinegar, then fold in cornflour and pistachio. Transfer to a piping bag fitted with a plain nozzle and pipe evenly within circle templates. Place in oven, reduce temperature to 120C, and bake until crisp but not coloured (1-1 hours). Turn off heat and cool completely in oven with door closed (at least 6 hours or overnight). Meringues will keep in an airtight container for a day. 2. For raspberry ripple cream, crush raspberries and icing sugar in a bowl. Whisk cream, crème fraîche and vanilla seeds in a bowl to firm peaks, add raspberry mixture and fold in to form ripples. 3. To assemble, place a pavlova on a serving plate, spread with a third of the raspberry ripple cream, top with another pavlova and repeat layering, finishing with a layer of raspberry ripple cream.
