18.01.2022 When it comes to beef weights, there are 3 different ones of which customers should be aware of. The first is LIVE weight. This is what the animal weighed on ...the hoof, or when it was alive. The next weight is HANGING weight. This is the weight that the butcher gives us after the animal has been taken back to the butcher shop to hang. The weight difference from live to hanging is from loss of blood, head, hide, hooves, viscera, lungs and heart. The hanging weight is usually about 62% of the live weight. So, a 1200 pound animal (live weight) would have a hanging weight of 744 pounds. This is the weight we base our per pound charges on. The butcher also charges cut/wrap fees based on this weight. The FINAL or TAKE HOME weight is again different. The weight is lost in 2 ways - from hanging to take home weight. About 4% is water weight lost during the 10-21 day period that the carcass is hung (or cured). Then about another 35% is lost during the cutting process. This amount is variable based on 2 factors one is the amount of fat in the meat, and the other is the cuts that a customer requests. Higher fat means more loss. Also, the more boneless cuts requested by the customer, the lower the final weight. (Note that the lower weight doesn’t mean that you are receiving less meat rather, you are receiving fewer bones). So why the hang time?? Hanging beef in a cooler for 10 - 21 days is recommended to improve tenderness. This process is called aging. This allows the enzymes in the meat to break down the proteins and improve eating quality. The process also allows the development of flavors associated with the aging process. Never hesitate to ask questions to your Beef source or your Butcher. Let us worry about the Live weight - the butcher worry about the Hanging weight - and you the consumer worry about the Final Take Home weight and get that cutting order just how you want it. 13.01.2022 Very pleased to have entered (for the 1st time) 3 steers in the Goombungee-Haden & Oakey Beef Classic, with 2 of those 3 steers coming home with 1st & 2nd placings and later taking out Champion trade weight steer. The 301-400kg class was a tough class of 20 entries, so we were super proud to be recognised against stiff competition. 18 vendors and 88 entries across 14 classes made it very worth while and a well run event to be a part of. We would like say thankyou to the judge, Brad Frohloff who had the unenviable task of choosing winners, Elders Rural services for the donation of our prize, and the many people who worked hard behind the scenes to make all this possible. We hope to support this competition again next year.

Your amazing job is no longer an amazing job, your expensive clothes now have no worth and no one cares how you look anymore.... Your big house is just 4 empty walls like everyone else’s. Your nice car is running on 4 tyres, the same as everyone else’s. We are finally seeing who the important people are, the ones who make a difference to our lives and are doing the crucial jobs we need. Shop workers Care workers NHS staff Emergency services Farmers Teachers Lorry drivers/delivery people Cleaners Refuse workers These people are the ones who keep our country ticking over, the core of our daily lives, the people who regularly go unnoticed and are often frowned upon but keep working hard, generally on a low income. People constantly look down on them and gloat that they earn more money than them. But what worth does your money have now? How secure is your job in the real world when we take a step back to reality? I’m proud of all of these people, they don’t earn enough for what they do, and they’re never appreciated for what they contribute. They’re still getting up to milk the cows, the lambing sheds are in full swing, the cattle are still being fed, the crops are being drilled, yet the CO2 has dropped. Maybe agriculture isn’t quite as bad as the media have been making out .... maybe the world isn’t going to end because of our livestock, maybe, jus...t maybe, agriculture is actually going to be the thing to save everyone when this world needs feeding and we cannot import avacados, coconut milk and mangetout from South America! ....eat local.eat fresh...
