19.01.2022 Today’s turning into a bit of a fermentation day! Here I’ve whipped up a quick vegan kim chi - bursting full of probiotics and gut-friendly goodness! Salt and soak a thickly diced wombok cabbage for a few hours, then drain and dry. For the kimchi sauce, add the following to a food processor and blitz: a head of garlic, handful of ginger, 2 white onions, 1 cup Korean chilli flakes, a few fresh chillies for extra heat, 2 tbs tamari, 2 tbs coconut sugar and 1 tsp miso. In a bowl..., add chopped spring onions and julienned carrot, then mix everything together with your hands, squeezing it to incorporate all the tasty goodness. Then bottle and place in a cool dry place for 2-7 days, tamping the mix down daily to remove air bubbles from fermentation. 18.01.2022 RAW PIZZA ANYONE? For a long time when I was healing from cancer, I was what you’d call a raw vegan. I only ate raw foods, rarely anything that had been cooked. Eating a raw food diet is believed to be a very healing and regenerating way to nourish your body, as cooking can destroy enzymes and key nutrients. Plus I just found that my digestive system felt better on a mostly raw regime. Preparing raw meals became a passion of mine. Far from just eating boring salads, I ...learnt from amazing raw chefs and poured over raw recipe books from my favourite cafes in Ubud, Bali. These days I still eat a lot of raw food but like most people I probably overindulged in cooked food over winter. Now that the weather is sunny and perfect outside, I’m naturally being drawn to a mostly raw way of eating. What does that look like you ask? Well today’s breakfast was chia pudding with coconut yoghurt and berries, lunch was a green smoothie, and this deliciousness in the photos is what I was working on today......RAW PIZZAS! Yep, pizza can be made 100% Raw with a few tweaks....you’ll be amazed at what you can do with a Vitamix and a dehydrator! The base is a mix of almonds, flax, zucchini, sun dried tomatoes and a few other goodies. Then I simply spread them on trays and popped them in the dehydrator for 8 hours to firm up. All the toppings are raw too: I blitzed up a fresh and sun dried tomato pizza sauce, and topped one with tomato/basil/mushroom and the other with a spicy walnut taco meat/red cabbage/avocado. They tasted amazing it’s totally worth putting the effort in when food is this good for your body and delicious at the same time! #raw #vegan #organic #dehydrated #guthealth
