25.01.2022 This easy vegan cauliflower soup recipe is incredibly creamy, healthy, so delicious and the best way to warm up! So simple its ready in just 20 minutes! Ingredients 2 tbsp oil of your choice 4 cloves of garlic minced 1 onion chopped... 1 head cauliflower cut into florets 1 potato peeled & diced 2 cups vegetable broth 1 cup non-dairy milk unsweetened (*see notes) tsp salt or to taste pepper to taste pinch of nutmeg optional 2 tbsp nutritional yeast optional to taste To garnish (optional) 2-3 tbsp pepitas and sunflower seeds fresh parsley chopped Instructions Heat 1 tablespoon of the oil in a large pot. Add the onion and cook for about 5 minutes, or until the onion is softened and turning translucent. Then add the garlic and continue cooking for 30 seconds, or until fragrant. Add the cauliflower (reserve of the florets for the topping as desired), potatoes, vegetable broth, and non-dairy milk. Bring to a boil. Then reduce the heat to a simmer, cover the pot and cook for about 15-20 minutes, or until the veggies are soft. In the meantime heat the remaining oil in a skillet. Cut the reserved cauliflower florets into thin slices, and cook until browned and tender, stirring occasionally. When the cauliflower and potatoes are soft, add the salt, black pepper, nutmeg, and nutritional yeast (if using) and blend until creamy using an immersion or a regular blender. (Taste and adjust seasonings as needed or add more non-dairy milk if its too thick). Serve the soup in bowls. Garnish with pan-fried cauliflower florets, pepitas, sunflower seeds, fresh parsley or your favorite toppings. Enjoy! 23.01.2022 Peanut Butter Banana Bites - This simple 4 ingredient recipe is below. Perfect for summertime snacking... especially if you have a sweet tooth (& just 50 calories each) Make a batch this week and keep them in the freezer so you can grab one whenever you need a treat ... INGREDIENTS 3 ripe bananas 1/3 cup natural peanut butter 1/2 cup dark chocolate chips 2 teaspoons coconut oil INSTRUCTIONS 1. Peel and slice bananas into rounds about 1/4 inch thick. 2. Line a platter or small baking sheet with parchment paper. Place about 1/2 teaspoon of #peanutbutteron a banana slice and top with another banana slice to make a little banana peanut butter sandwich. Keep doing this until all banana slices are used and you have about 30 bites. Place bites on two plates and place in the freezer to harden for about 1 hour. 3. Once banana bites have been in the freezer for over an hour, melt your chocolate by adding chocolate and coconut oil to a microwave-safe bowl. Microwave for 1 minute, stir and microwave in additional 30 second increments until chocolate is completely melted. This shouldn’t take more than 2 minutes of microwave time. 4. Once chocolate is melted, remove one platter of your frozen banana bites from the freezer. Dip each frozen #banana bite into the melted #chocolate so that half of each bite is coated. 5. Place chocolate covered bites back on the parchment lined platter. Place back in freezer to harden up, grab your second platter and continue until all the bites have been dipped. Let both platters of chocolate covered bites harden in the freezer for about 15 minutes. 6. At this point you’re ready to enjoy or you can transfer the bites into a freezer safe storage container for later. They should last a least 1-2 months in the freezer. 7. 20.01.2022 Legs of Lamb just $13.50kg at your local Supa IGA Blaxland. So why not spoil Mum with a simple Roast lunch this Mothers Day. Ingredients For the anchovy crust... 25g anchovy fillets in olive oil, drained 31g bunch flat-leaf parsley 1 lemon, juiced 1 tbsp olive oil 2 garlic cloves For the lamb 2kg leg of lamb 1kg white potatoes 1 head of garlic, halved 15g fresh rosemary 3 tbsp olive oil 1 lemon, long strips of zest removed with a vegetable peeler Method 1. Preheat the oven to gas 6, 200C, fan 180C. Begin by preparing your paste. Empty all the crust ingredients into a food processor and whizz to a coarse paste. 2. Place the leg of lamb in a large roasting dish and spoon over the paste. Using the back of the spoon, gently smooth it over the lamb. 3. Cut the potatoes in 2mm slices widthways, two thirds of the way through dont cut through to the bottom. Nestle the potatoes around the lamb. Add the halved garlic bulb and rosemary stems. Scatter over the lemon zest. 4. Drizzle the olive oil over the lamb and potatoes. Season well. Roast for about 1 hr 15 mins. Check the lamb after an hour and if the crust is becoming too dark, loosely cover the roasting tray with foil and return to the oven. 5. Remove from the oven and allow to rest for 10 mins. Carve the lamb and serve alongside the potatoes. *Offer ends Tues 12th May 2020*

01.01.2022 HOMEMADE PIZZA Theres no better way to spend this cold rainy Friday night, than making homemade pizzas with the family. Heres a great recipe that is easy and delicious! RECIPE:... This made 1 pizza 1 1/2 cups plain flour 1 tsp salt 1 tsp sugar 1/ tsp instant yeast (or 2 sachets) 1/2 cup warm water Olive oil Pizza toppings: 2 tbsp tomato paste 1 clove garlic, minced Paesanella mozzarella cheese Handful baby spinach 1/2 tsp italian herbs Salt & pepper Optional - sprinkle of pine nuts Combine the yeast, sugar & warm water. Mix and let it sit for 15 minutes to thicken. Add it to a down with the flour & salt and mix it to form a soft dough. Brush the ball of dough and the bowl with olive oil and cover with cling wrap or a towel. Let it sit for 2 hours to rise. Transfer to a floured surface and knead for about 5 minutes. Roll out into a round shape or any shape you like. Go thin because it will rise as it cooks. Add your toppings. Try adding the spinach a few minutes before removing from the oven. Cook at 200c for about 15 minutes and enjoy!
