23.01.2022 Any kind of cake made with almond meal is a winner with me. It's filling, low in carbs, and dense, so it keeps the belly feeling fuller for longer. Serve it with a sprinkle of icing sugar (go on!) and a cup of English Breakfast tea. APPLE & ALMOND CAKE INGREDIENTS:... 2 golden delicious apples, skin on, grated 2 cups almond meal 1 tsp baking soda 2 free range eggs 1/4 cup olive oil 1/4 cup raw honey 1 tsp vanilla essence zest of 1 orange shaved almonds METHOD: Combine the almond meal, baking soda, eggs, olive oil, honey, vanilla and orange in a large bowl. Stir well. Add the apple and stir gently until combined. Line a 30cm round cake tin with baking paper and pour in the mixture. Top with shaved almonds. Bake at 160C for 50 minutes. Test with a skewer, cook another 5-10 minutes if needed. Serve warm with a sprinkle of icing sugar. SUPERFOOD FACT: More than 65% of the fat in almond flour is monounsaturated, which is excellent for maintaining healthy cholesterol levels and good overall heart health. Additionally, scientists find that almond consumption can reduce the risk of coronary heart disease by keeping blood vessels healthy. This is a good reason to eat more cake!

The sweetness of the butternut pumpkin works perfectly with the coconut milk! To stay fuller for longer, use full fat coconut milk. THAI PUMPKIN SOUP | Serves 6 INGREDIENTS: 1 large butternut pumpkin, cut into quarters 2 tbsp olive oil 1 small onion, diced 3 garlic cloves, finely chopped 1 tbsp ginger, finely chopped 2 tsp red curry paste 4 cups chicken stock juice of 1 lime 400g can coconut milk toasted shredded coconut, to serve METHOD: Place the pumpkin on a baking tray and brush with olive oil. Roast at 180C for an hour. Place onion, garlic and ginger in a large saucepan with olive oil, heat and stir for a couple of minutes. Add red curry paste and stir for another couple of minutes. Add stock, lime juice and coconut milk. Heat through. Scoop pumpkin flesh out of the skin with a large spoon and place in the saucepan. Blend entire mixture in a blender or with a stick blender. Serve topped with shredded coconut. SUPERFOOD FACT: Pumpkin is one of the best-known sources of beta-carotene, a powerful antioxidant that gives orange vegetables and fruits their vibrant color. Beta-carotene is converted to vitamin A in the body once it is eaten. 08.01.2022 Monday mornings are always a challenge in my household - lunches to pack, two kids to get ready for school, and just the fact that the work week is starting - it's no fun for anyone! Unless....we add a little fun and all-round yumminess to the routine in the form of these banana and peanut butter oats. A bowl of goodness that can be prepared the night before in only minutes! BANANA & PEANUT BUTTER OATS INGREDIENTS: 1 banana, mashed 1 cup rolled oats 1/4 cup natural peanut butter 1 cup unsweeteend almond milk 1 tbsp chia seeds sliced banana and cocoa, for topping METHOD: Mash the banana in a bowl, then add the remaining ingredients. Mix well until the peanut butter is combined. Cover and refrigerate overnight. Serve with toppings in the morning. SUPERFOOD FACT: Bananas are rich in potassium. This mineral is important as it helps maintain fluid levels in the body and regulates the movement of nutrients and waste products in and out of cells. Potassium also helps muscles to contract and nerve cells to respond. It keeps the heart beating regularly and can reduce the effect of sodium on blood pressure. Plus, they're yummo!
