24.01.2022 How about something to warm you up on this cold Wintery day... Strawberry Crumble You will need: - approx 500gm strawberries... - 2 cups oats - 1 tbs butter - 1/2 cup brown sugar - 1 tsp golden syrup Method: Hull and cut up strawberries to desired size. In a medium sized pot, add 1/4 cup water and 1/4 cup of brown sugar, stir and simmer on stove until cooked through. Pour into bottom of casserole dish. Melt butter and rest of brown sugar (1/4 cup) and add to bowl with oats. Stir until oats are coated. Add in golden syrup and mix. Pour or on top of cooked strawberry. Cover and heat in oven at 180^ for 10 mins. Take off cover and keep in oven for further 5-10 mins until golden (keep an eye on it so you dont burn the crumble!) Lucky that I also have been freezing and cooking into small batches all the riper ones to get us through the next 4 months! 13.01.2022 Oven Dried Strawberry Chips (how to below ) It took me 4 goes to get this right, but when I did, yum these are delicious! (Hence why I cant share my pic there werent enough left!) so this one by Feed them wisely is perfect... and next time Ill need to do a bigger batch!... See feedthemwisely.com recipe in comments, and this is what worked for me in the end... 1. Set oven on the lowest keep warm setting ( my oven -electric- was set to 70 ) just fan - not upper or lower heating elements 2. Super thinly slice strawberries into even pieces approx 1/8 inch 3. Lay pieces of baking paper on baking tray with some space between them 3. After 2 hours carefully flip over 4. One more hour and they should be done, but keep an eye on them the thinner ends will start to burn so just remove the ones that look done if others need more time 1 large tray (pictured in comments) maybe made only 3/4 cup! #strawberrysnack #healthysnack #ovendriedstrawberries

04.01.2022 Strawberry Oat Cookies 1 cup strawberries (Im onto my simmered batches now - cut and simmered on the stove with 1/2 cup water until all cooked through - freeze when cooled) 1 1/2 cup rolled oats 1 cup plain (all-purpose) flour... 1/2 cup brown sugar 1/2 cup desiccated coconut 125 g butter 2 tbsp golden syrup 1 1/2 tbsp water 1/2 tsp bicarbonate of soda (baking soda) Method 1. Preheat oven to 160C. Grease oven trays; line with baking paper. 2. Combine oats, sifted flour, sugar and coconut in a large bowl. Place butter, syrup (spray the measuring spoon with cooking-oil so all the syrup comes away) and the water in a small saucepan; stir over low heat until smooth. Stir in soda, then stir into dry ingredients. Add in warmed strawberries. 3. Roll tablespoons of mixture into balls; place 5cm (2-inches) apart on trays, flatten slightly. Bake for 20 minutes or until golden; cool on trays.
