25.01.2022 Cakes for men are always a challenge - the colours and decorations are more limited. Mel asked me to make a cake for Babak. It needed to be masculine but also a bit over the top. I went with black, white, gold, and navy. On the inside was a vanilla cake with Oreo buttercream.
25.01.2022 CALLING ALL BRIDES With weddings getting smaller and budgets getting tighter, I hope more brides will consider cupcakes as a desert option. They are delicious, pretty, quick/easy to serve, and hygienic as they are in paper casing. This dozen went out to a bride-to-be.and her fiance to sample.

23.01.2022 My work has turned me into a real flower lover. I purchased these roses today for a cake due on Sunday. I always buy my cake roses several days before so they can fully open. I'm lucky to have Wild Forager florist and The Captains Shop nearby; both stock gorgeous blooms.

22.01.2022 I enjoyed making this cake for Kate's 50th last weekend. I mixed new dyes and used a new cake stencil for the border. Peonies are one of my favourite flowers. They come and go into Sydney for about a month each year and also are very fragile - once they bloom, they tend to drop leaves and die quickly. So, I was happy that these flowers were in full bloom for her chocolate mud cake.
22.01.2022 Texture & color. Sophia wanted something pretty and plum/maroon for her friend's birthday. I started with a milk chocolate buttercream and added some red, burgundy, fuschia, and pink gels to get these colors.

21.01.2022 A wonderful and sunny Melbourne Cup spent with friends from tennis. A great afternoon and rare occasion to dress up and make mini cupcakes. I find them hard to decorate as they are so small and fiddly. Luckily, I was able to use some of the leftover colourful Halloween icing from this weekend. (don't worry - buttercream last 2 weeks in fridge, 3 months in freezer)
20.01.2022 It's been a rough year for everyone and I especially feel for the Year 12 students. Tania had a virtual graduation at her home while she and other parents watched their children via Zoom have graduation ceremony at St Luke's school. These cupcakes were vanilla, chocolate, and sticky date and in school colours.
20.01.2022 I made a cake AND got to eat it today when I had a lunch for 10 school Moms (sorry, still can't get use to "Mums"). It was really nice to catch up with friends that I haven't seen in months due to this crazy COVID year. Carrot Cake with Cream Cheese frosting is delicious.

19.01.2022 Ah, spring is in the air and coming through in my cupcakes. Three dozen of these beauties are heading on a road trip north, up to celebrate a 90th birthday. To get these deep colours, I mixed various gels and let the butterceam sit for 8 hours to develop and deepen over time.

04.01.2022 2 dozen vanilla cupcakes with chocolate buttercream for Amber's son's 3rd birthday. I rarely get asked to make chocolate buttercream and it's a shame as it is so delicious. A great tip for chocolate buttercream is to beat the softened unsalted butter with the cocoa first so that there wouldn't be any clumps. You get a silky, delicious texture and deep brown color. Yum.

02.01.2022 I was away in Byron Bay last week and the only purchase I made was a bottle of dried edible flowers from a cafe. They came in handy this weekend as I used them to decorate Baby Flora's 1st birthday cupcakes. Pastel hues were created with wonderful Colour Mill dyes.
