Forester Estate was built in 2002 and is owned by the McKay family, located in Yallingup, in the northern Margaret River region. . After studying Muresk Agricultural College, Kevin McKay headed to Margaret River and became the winemaker and vigner...on at the familys Abbey Vale winery until the family sold it in February 2001. At Forester Estate, Kevin is the Winemaker, Vigneron & Owner where they focus on making super premium and iconic wines. . Todd studied at Bachelor of Science in Viticulture and Oenology at Curtin University and with vintages abroad, Todd became the Winemaker at Plantagenet Wines in Mt Barker until 2006. The story behind the wine label Bonhomie comes from the French words bon meaning good and homme meaning man. For winemaker Rohan Wilson, the name resonates cheerful friendliness because for him sharing a good bottle of wine with good friends and family should be just that. ... . Rohan is all about being hands on while keeping his production small. In the Clare Valley, he works with local and small families to produce his boutique and hand crafted wines. Sourcing from one single family vineyard, Rohan uses minimal intervention. Following wild fermentation, the wine spends time in a basket press and then in a selection of older seasoned French oak before bottled unfiltered and not fined. . He was so passionate and knowledgeable.... . It was a busy Monday, in short, this is how the day went. . . . 1. Toured the vineyards with Colby Quirk (head winemaker)the highlight being the formation of flowers on the vines (each tiny flower becomes one grape). Also learnt how grafting and planting of new vines works. 2. Checked out the different oak formats and their effects on the wine. 3. Watched the ‘traditional method’ of sparkling wine taking place in every stage. 4. Checked out the fortified barrel shed and learned the fortification and solera methods. 5.
