25.01.2022 Good morning! I've just taken a batch of pepper out and thought I'd show you what we are looking for when we smoke pepper. The sample on the right is unsmoked. That's regular whole black pepper. The glossy sample on the left has been smoked twice which in our smoker equates to about 10-12 hours. This glossy, textured appearance is how we know it's done Have a great Tuesday, people!

05.01.2022 It's been a while since I posted, and even longer since I've had a chance to play with my food. I'm going to play with a small brisket rubbed with some home grown dried rosemary and our magic salt on a bed of roast veggies. All smoked with Apple wood in my old faithful weber. Pics to follow.
