10.01.2022 One of the tricky things about having a micro honey business is that we don’t have to moving equipment that the bigger apiarists have. . We have lots of little loads of bees which we move by hand to the floral sources. It’s hard work! A beehive can weigh 100kg.... But it means we can have our bees at lots of local spots, to get the best local Gippsland honey! . Well, it’s moving time again tonight so I’ve made yet another pack of cookies to thank the property owners for having us. It’s lucky I’m on holidays from my day job! Phew! 03.01.2022 Today’s job (which I absolutely love) is to make these unwanted apples into pie fruit and apple sauce. . They are too sour mummy! So I got them... .... I’m using a tiny bit of dark, rich honey to remove the tartness and bring out the fantastic apple flavour. . I’ll portion it into silicone baking moulds and freeze it for use in baking throughout the year. See more

03.01.2022 What a beautiful Spring day! . Our little swarm has settled in. Chris is on his way to get another as I type. . If you spot a swarm hanging out somewhere, it’s just nature’s way of reproducing the colony. Swarm bees are (usually) very docile. BUT... be sure to call us quickly because they are looking for a new home and can very quickly get into an annoying spot like the roof of your house or chimney where they are near impossible to get out! ... . If we can collect them while they are still in a clump, we can simply hand them the nicest snuggly home and keep them safe and healthy See more
