21.01.2022 At Sweet Potatoes Australia, we are proud to support and mentor agriculture students. This is Amber and Lilly who are currently working with us while they both complete university degrees. Lilly comes from a long line of farmers her father is a local 4th generation farmer. She is completing a dual degree of Sustainable Agriculture and Agribusiness at the University of Queensland, Gatton and is working with us in her study break to drone map our sweet potato fields. Dron...e mapping is used to inform our farm team about the health of the crop and helps with irrigation and fertiliser management. Amber works as one of our Quality Assurance Officers and is completing her Bachelor of Agriculture degree at CQUniversity Australia, Bundaberg. Eggplant & Sweet Potato Curry Serves 4 Quick. Easy. Delicious. 400g sweet potato, peeled and chopped into chunks 1 eggplant (450g), chopped into chunks 2 tbsp. (56g) Korma paste 400ml coconut milk Preheat oven to 180C. Line a baking tray with baking paper. Bake the peeled and chopped sweet potato for 15 minutes. Meanwhile, in a large non-stick frying pan, sauté eggplant until lightly golden. Add the sweet potato, season and toss, cooking for 1 minute. Add the Korma paste and toss to coat (‘Korma is an Indian sauce based on mixture of spices, including ground coriander and cumin). Reduce the heat, add the coconut milk, swirl cup (60ml) water to release remaining sauce and add to the pan. Simmer for at least 20 minutes, allowing time for the flavours to develop. Q: What’s a mistake you made early on in your career, and what did you learn from it? ... A: When I started working, I went on gut feeling but as time has progressed, I now know that it’s all about the data - the numbers never lie. Q: What led you to a career in agriculture? A: I started in the agriculture industry when I was asked if I would consider building a brand-new facility for grading grape and truss tomatoes, and it progressed from there. I have been blessed to work with some great (and at times) challenging commodities - it’s been a massive ride getting new machinery and processes working to their optimum efficiency. Q: If you had an extra hour every day, how would you spend it? A: Professionally, an extra hour to catchup with staff would be great! And personally, an extra hour would be well spent on my boat. Q: What’s your proudest achievement whilst working for Sweet Potatoes Australia? A: This again is two part. Professionally, landing Sweet Potatoes into the Northern Hemisphere, proving it can be done and opening a whole new world of customers.
