I've shared my mum's story over on the blog, and it comes at a time when our government is giving money to people who have lost work due to Covid-19 to stimulate the economy. Some of you might remember the GFC and Kevin Rudd's cash injection (in Australia). My mum was overweight and spent the money on a Wii Fit. 24.01.2022 Have you read about my transition to a Low Carb High Fat Diet. I eat just 3 meals a day because I'm full, whereas previously I'd eat 3 meals and be looking for snacks as well. I've got more energy - even more than I had previously, which is a bit of a worry and I can concentrate for longer. These are just some of the benefits I've seen.... 23.01.2022 Working lunch @mudjiravillageeatery The flavours of the Macadamia Satay Tofu Bowl were to die for. Marinated tofu, coconut rice, sweet pickled cucumber, macadamia satay sauce, bok choy, cabbage, edamame and pineapple ginger chutney. And finished nicely with some charcoal and medicinal mushrooms with chai.

21.01.2022 I feel like it's been ages since I posted a recipe. And while I'm not doing one today, I did actually make something new today. A Thai Green Veggie Curry. The recipe will be up by the end of the week. I'm just a little bit excited that I had a chance to make something and time to photograph it. I've missed my camera. I've got a few updates to share, but first I need to eat this. It's yummy!

20.01.2022 *NEW ON THE BLOG* Chocolate Choc Chip Cookies WET cup white sugar cup coconut sugar... cup coconut oil, melted 1 tsp vanilla essence cup almond milk Dry 1 cup self-raising flour, sifted cup cacao cup dark chocolate, chopped (or use choc chips) WHAT TO DO Place the white sugar and coconut sugar in a large bowl. Add the remaining wet ingredients and whisk until the sugar dissolves. Sift the flour and cacao onto the wet mixture and fold together. Don’t overmix. Stir the choc chips through gently. Put the dough into the fridge for 30 minutes. Preheat the oven to 180C Line a large baking tray with non-stick paper Place a spoonful of cookie dough into round shapes on the tray, leaving approx 2cm between cookies. Bake in the oven for 10 mins until the edges are golden brown. Remove from the oven and allow to cool. Store at your friends house so you don’t eat them all. Enjoy (some of them!) See more

18.01.2022 Raspberry and Cacao Power Pots Good things come to those that wait and you'll have to wait for these but trust me, it'll be worth it. ~~~ What You Need ~~~ cup chia seeds 1 cup almond milk... 1 tsp maqui powder 1 cup raspberries (fresh or frozen) 5 dates (pitted) 2 bananas 2 tbsp cacao cup peanut butter 1 cup almond milk TO SERVE shredded coconut cacao nibs banana (extra) ~~~ What To Do ~~~ Place chia seeds, almond milk and maqui in a bowl and stir until combined. Stir in the raspberries. Place in the fridge for at least 1 hour. Soak the pitted dates for 15 minutes. Add the dates to a food processor and blend until smooth. Add cacao, bananas, peanut butter and milk and continue blending until all ingredients are mixed together. Place in the fridge to set for at least 1 hour. Remove the raspberry mixture and the chocolate mixture from the fridge. Place a layer of the chocolate mixture into 6 small glasses being careful not to touch the sides of the glass. Top with the raspberry mixture. Repeat and then top with coconut, cacao nibs or extra banana. Nom nom nom @ Gold Coast, Queensland See more

18.01.2022 Amen to some good old researched based evidence of LCHF. I’ve written a post over on the blog about LCHF if you want to no more but these pointers done below are "It’s time we had this conversation. LCHF and fasting for female athletes are being criticized of late, and I feel we’ve lost perspective. Please consider:... 1. It’s not unhealthy or dangerous to eat more plants, high quality protein and healthy fats. These are the most nutrient dense options there are. 2. It’s not unhealthy or dangerous to swap refined carbohydrates for whole food carbohydrates. I hope this is obvious. 3. It’s not unhealthy or dangerous to check in with the volume of fruit or starch you eat, in fact if you don’t, you often end up under-eating greens, protein and healthy fats. 4. It’s not unhealthy or dangerous to simply eat breakfast when you are hungry, rather than the minute you wake up. Everybody fasts. We’re not talking about water or dry fasts here. 5. It’s not unhealthy or dangerous to exercise at a light to moderate intensity before breakfast. I almost always recommend an MCT Coffee prior, which provides ~250 calories and still counts as fasted training for the purpose of this discussion. We do need more research on fasted training in female athletes and an important definition will be between those who are fat adapted and those who are not. We simply can’t study a sugar burning metabolism and extrapolate the results to every female athlete. 6. LCHF is not keto. For female athletes, 75, 100 or 150g of carbohydrates per day from wholefoods is not unhealthy or dangerous. Like everything in life, it’s relative. So if you are of menstrual cycle age, use your cycle as your monthly report card. And change things if you are not getting an A+ each month. What do you think? 17.01.2022 Green Tofu Curry with Cauliflower Rice ~~~ I recently did a low carb high fat (LCHF) reset for 2 weeks, which meant reducing carbs in each meal, and adding in good quality fats and of course having protein with each meal. ~~~ There is a lot of research suggesting this is a good way to go for everyone, as it reduces your sugar and carbohydrate cravings.... ~~~ Obviously some carbs are essential, but it's a balancing act, particularly for endurance athletes, like myself who train regularly and want to have energy for long workouts. ~~~ I've written about this in depth over on the blog. 01.01.2022 I'm guessing you've asked yourself this question one hundred times and I'll take a stab in the dark and say that the answer 95 times is you're bored. So what can you do? It’s simple enough - and advice that I hadn’t followed for years - but have just started to drink a glass of water if ever I felt hungry. And, surprise, surprise, it works. Lately I’ve been following a low carb, high fat lifestyle and with the increased fat and reduced carbs I’ve been feeling A LOT less hu...ngry. But I still have those moments when I feel hungry. It’s a false feeling because if I drink a glass or two of water the hunger goes away. I’m now having between 4 and 5 hours between meals, which is also good news for my digestive system.
