In these times we are grateful that our facility is such a great learning space for the students. The food they are creating and the service they are providing, is as always, of a high calibre. 23.01.2022 ** RECIPE: Easy Focaccia Bread ** Hello again baking crew This is the bread that the students serve as you peruse the menu and start your drinks. Our famous fococcia bread with chunky salt, sometimes Rosmary, sometimes other goodies.... This recipe is easy to follow (like all the others) and is totally delicious. Eat it whilst warm and serve with Balsamic vinegar and oil for a Swipers experience at home. Or with some dukkah, or butter, or make a BLT. Have a go and let us know. Happy baking! 18.01.2022 ** RECIPE: White Chocolate Shortbread Biscuits ** Hi again everyone, Here is the biscuit you would have seen in last week's (brulee) video. In the restaurant we use these to dip into the brulee, you can use them however you like!!... These are super easy and you guessed it, delicious. The question is, will you make fingers or rounds?? haha! It's the only tough decision. Give it a go and let us know. 13.01.2022 We are going so well in the kitchen and in the restaurant that we needed a reminder to post more photos! These smiling happy students make it all worthwhile. The food is excellent, the service impeccable and the vibe is super fun. Swipers is very different without 'guests' but we are extremely grateful to be able to continue with our hospitality learning. These students are doing a fantastic job.

Swipers Gully will therefore not be operating and is officially closed to the public with immediate effect. Classes will still operate for students undertaking Front of House and Kitchen Operations training. ... We would like to let you know that Swipers Gully Training Restaurant will unfortunately NOT be opening to the public in line with the Victorian Premier Daniel Andrews announcement that, effective from midnight Wednesday July 8, the stay-at-home Stage 3 Restrictions will be re-imposed for the Melbourne metropolitan area, which includes the Shire of Nillumbik. Here it is.... the delicious risotto recipe from the restaurant that all of you come to enjoy and the student's really feel accomplished after making it.
