25.01.2022 #TASTINGTUESDAY @lartisancheeseorganic Petit Rouge is one of my absolute favourite Australian cheeses, made by the talented Matthieu Megard, a 3rd generation French cheese maker living in Geelong. This gorgeous washed rind cheese is made from local organic single herd Jersey cows and has a distinctive orange sticky rind. When mature, the soft centre oozes unashamedly On the nose, this cheese has medium savoury aromas, with salty, umami flavours. WINE PAIRING - Try a full ...bodied rich white wine such as a warm climate Chardonnay (McLaren Vale, or Barossa) or a light bodied red such as Pinot Noir or Sangiovese. If wine isnt your thing, try a stout beer or strong cider. FOOD PAIRING - As this is a complex cheese, I like to keep the pairings simple with fresh fruit and fruit sourdough.

We did the dash to the local bakery the day before, but they were sold out!!! TRAGIC! Luckily my Mummy Hacker intuition kicked in and I came up with this winning recipe. 16.01.2022 #TASTINGTUESDAY This week we travel to the stunning Pyrenees Mountains, to discover one of the first cheeses ever made! Ossau-Iraty is a relatively unknown semi-hard sheep cheese. It has flown under the radar for hundreds of years, with reports of its production dating back to the first century. Local Monks who loved a good cheese platter, made their own Ossau-Iraty in the monasteries. ... 15.01.2022 #TASTINGTUESDAY Pecora Dairy Bloomy Ashed sold out in 30min! My market stall was going gang busters. But as I took a piece of chalk and crossed it off the menu, I could hear grumbles behind me. We had barely unwrapped the Pecora Dairy Bloomy Ashed tasting portion, when fromage lovers swarmed to get their hands on this beautiful ashed ivory sheep milk cheese.... Clearly the crowd knew their cheese and had a taste for quality. Note to self - order more Bloomy next time! Check out wine pairings and tasting notes for Bloomy

13.01.2022 #TASTINGTUESDAY Can a cheese be so delicious that it helps bring down the King during the French Revolution? Oui oui!... Its said that while trying to escape the monarch and the guillotine, Louis XVI got a hankering for some Brie de Meaux, while passing through Varennes-en-Argonne. Am guessing that was one GOOD cheese toastie! While washing down his cheesy snack with a glass of red, Louis was spotted and captured. Upon his return to Paris, he was executed and the Monarchy died along with him. Thankfully Le Roi des Fromages (The King of Cheeses) survived the Revolution. The only crime associated with Brie de Meaux these days, is failing to feature it on your cheese board! Check out the tasting notes for perfect wine pairings

07.01.2022 #tastingtuesday Before the days of Tinder and Bumble, young shepherds in the south of France were on the look out for beautiful young maidens while tending their sheep. According to cheese legend, Roquefort was born when a romantic shepherd left his lunch of bread and cheese in a cave, when he got distracted chasing a good sort. After having no luck on the dating scene, he returned to the cave months later to find the remains of his lunch.... Strangely, he decided to try the mouldy cheese and discovered it was delicious. He soon realised he was onto a winner and decided to replicate the recipe. The rest is history. See why the French adore this cheese and what to pair it with.

07.01.2022 OMG just met my cheese HERO!!! As a cheese geek, sitting down to watch Cheese Slices on TV always takes me to my happy place. The people, the places, the cultures and the cheese! It was an absolute honour to meet the incredible @willstudd at @simonjohnsonprovidore Cheese Masterclass. Will is a passionate pioneer and over the years has battled with Australian food authorities to allow raw milk cheeses into Australia.... Can you believe we were almost denied Parmigiano Reggiano, Gruyre and Roquefort!?!? Ridiculous Thankfully, due to Wills determination and much negotiating, authorities granted exceptions to certain raw milk cheeses. However the fight continues... Send your prayers and support that we can continue to enjoy Roquefort. It seems continual changes to food standards here in Oz are against us. Thank you Will for being a cheese crusader and forging ahead to bring the best quality cheese possible to Australia
