25.01.2022 In celebration of World Fisheries Day, we announced the recipients of our annual Environmental Grant. Each year, this grant is awarded in order to raise awareness of the importance of maintaining the world’s fishery habitats and improving professional fishing standards. Our first recipient was Natural Oyster Company from Pambula, who plan to use the grant to reduce the surface footprint of oyster farm infrastructure. By introducing a new ‘grow-out’ farming method to local estuaries, as well as implementing a floating basket system to minimise floating debris, Natural Oyster Co aims to reduce the surface footprint of their oyster farming activities by 25%. INGREDIENTS 1 kg cooked Australian Prawns 10 garlic cloves... 1 tablespoon olive oil 3 tablespoons fresh horseradish cup mayonnaise 2 teaspoons lemon juice teaspoon sea salt METHOD Place garlic in tin foil and drizzle with olive oil. Wrap to enclose and roast for 20 minutes or until golden. Allow to cool. Place the garlic and remaining ingredients in a small food processor and process until smooth. Serve with fresh Australian Prawns and simply dip them in! Makes 1 cup Serves 8 as a platter

15.01.2022 Crank up the oven and give this recipe for Baked Whole Coral Trout with Potato & Tomato a try. Ingredients: cup extra virgin olive oil ... 2 cloves garlic, finely sliced 2 tablespoons rosemary, roughly chopped 1 dried bay leaf cup small black olives 200ml dry white wine 800g canned tomatoes, roughly chopped cup roughly chopped flat-leaf parsley Salt flakes and freshly ground black pepper, to taste 6 large potatoes 1 x 1.5kg Coral Trout, scaled, gilled and gutted Method: Preheat the oven to 200C. Heat half the olive oil in a saucepan. Add the garlic and cook for 1 minute, add the rosemary, bay and olives and cook for a further minute. Add the wine and bring to the boil. Add the tomatoes, parsley, salt and pepper, return to the boil, reduce heat and simmer for 10 minutes. Meanwhile peel and dice the potatoes and place in a heavy roasting dish. Add remaining olive oil, salt and pepper and toss well to coat. Bake for 10 minutes. Wipe the belly cavity of the fish thoroughly with a clean damp cloth to remove any trace of blood. Score both sides of the fish with 3 or 4 angled cuts through to the bone. Remove roasting dish from oven and push potatoes to the sides of the dish to make space for the fish. Place fish in dish and spoon the tomato sauce over the top. Return roasting dish to oven and bake for a further 30-40 minutes, until the flesh flakes easily when tested with a fork. Each year, thousands turn out as a statue of the Madonna the Santa Maria Di Porto Salvo (literally translated as St. Mary of Safe Ports or Safe Harbour) is taken on a colourful procession around the Sydney Fish Market site, returning to the wharf to bless the decorated local fishing fleet. As we’re unable to honour the tradition this year, we’re sharing some of our favourite moments from past celebrations and hope to welcome you all back for next year’s event!

12.01.2022 Pipis are found all around the Australian coast and are hand-harvested from the intertidal zone of sandy beaches with good surf. Due to their sandy habitat they can contain quite a bit of grit, ask your fishmonger if they have been purged. If Pipis havent been purged, place them in a solution of cool water and sea salt (30g salt to each litre of water) for several hours, or overnight, in a cool part of the house. To store at home, place in a container, cover with a damp cloth and keep in a cool part of the house.

10.01.2022 The much anticipated redevelopment of Sydney Fish Market is another step closer with the NSW Tourism Minister Stuart Ayres today announcing that Hansen Yuncken has been announced as the stage one contractor. Stage one work can now officially begin in the coming weeks and will be focused around the controlled demolition of the existing wharves and support structures on the site, the removal of marine piles and any repairs to the existing sea wall. This year, we awarded two worthy groups with the grant, to assist in their continued environmental initiatives. The second recipient of this year's grant was Wallis Lake Fishermen's Co-Op, who plan to use the funds to improve their salt water filtration systems, and to allow them to clean their site without the use of harmful chemicals. They are excellent battered and deep fried, or grilled, or poached. The dish pictured comes from Sydney Seafood School: Warehou served with Fennel Slaw & Beetroot Yoghurt. Another great dish to get the kids involved is fish fingers Cut the fillet into appropriate sizes, dust with seasoned flour, wash with ...beaten eggs, and roll in breadcrumbs. Fry (either shallow or deep) and serve with a homemade Tartare. 01.01.2022 We were up early for the Sydney Fish Market auction in search for some lesser known seafood species like this Deepwater Flathead. The large mouth indicates a diverse diet which gives fish like this a neutral, sweet flavour profile. Our tip is to not be afraid to try something a little different.
