25.01.2022 Why have I not made a simple sponge cake for years?!? I randomly found out that it is #nationalspongecakeday today And with the piles of gorgeous winter eggs we have at the moment, I decided to dust off the cwa ladies cookbook and give it a crack (pardon the punn). I am so happy I did! It’s just the way my Nanna used to make... gloriously golden yellow from the free range farm eggs, light and airy. Nanna used to say that sponge cakes could not possibly be bad for you as t...hey are FULL of air. I’ll run with that Nanna!! I’m not sure what’s in your CWA ladies cookbook, but in mine (the 1970 version) there were two options. I used the Sponge Cake (No 1) recipe. It is far simpler than No 2. I did substitute the lemon essence with a teaspoon of vanilla extract. I cooked in one pan and as you can see piled high with cream, strawberries and a simple raspberry syrup (made with frozen raspberries and sugar). Dust with the obligatory icing sugar of course! I can guarantee that every friend will appreciate it if you whip out a tray of these perfect little Strawberry Jellies with Cheesecake Shortbread Cream, at the end of the evening. Ultimate spring dessert. The jelly recipe is by #katelamont. Use the ripest reddest strawberries you can find. I highly recommend her cookbooks. When I first started getting serious about cooking, her recipes were an inspiration to me.

The pic doesn’t show the toddler at my leg, demanding to be picked up or the tantrum that Jimmy had because Isla had more goes at rolling than him, or me having to quietly redo the filling on two of the sheets because it looked as though isla had been filling them for giants at one end and mice at the other. It was so good though! Worth every delish bite

Classic, yet exciting and unapologetically meant for everyone to cook.

21.01.2022 Does anyone do a Sunday roast? In our house it’s a Monday roast but we don’t have them anywhere near as often as in my childhood. Spring weather calls for lamb roast... except it’s lamb chops and salad that I’d prefer. Chicory and Asparagus we’re looking brilliant and so cheap in the markets on the weekend. Add haloumi & Tahini Yoghurt dressing, and a lemony couscous (well seasoned please ) Monday dinner sorted. Super fast to throw together.

18.01.2022 Ravioli making. My little tip is, after you’ve cut them, use a small rolling pin to roll over each edge of each piece to make extra sure they are sealed. It takes a bit of time but will ensure they don’t bust in the boiling water and thin the edges out a bit so the pasta is nice and tender. Don’t worry about jagged edges too! It’s homemade and why waste those little corners just to get them perfect. As long as they are roughly all the same size, they’ll cook the same.

The open side of the shed was sheltered by a stunning clear marquee with a bar, dance floor and band space. It was an exceptional mix of historical farm pieces & rustic vibes with crisp, white linen, fresh tunes to make you get up and dance... and mood lighting. I’m sure the guests will be talking about this evening for a long time Three Wedding Cakes styled on the family’s vintage #singersewingmachine and a complete dessert grazing table on an original old farm wagon by me @wildstrawberrycatering. 06.01.2022 Raw Chocolate & Nutella Brownies Please really do try these. I’m a teeny bit over coconut oil in raw treats. These are blissfully coconut oil free made with the usual raw culprits, dates, your choice of nuts, rice malt syrup and cocoa powder (because let’s face it, who ever uses raw cacao powder ?) but I’ve included a bit of Nutella and a delish, raw topping that makes these incredibly gooey and bite worthy. A sprinkle of sea salt makes them taste like they actually have butter in them too, I’ve discovered. Bonus...for all the mums who are as unprepared as me with lunchbox treats. No baking required, a quick blitz, press and refrigerate and they’re done. Recipe on the website today

05.01.2022 Who else agonises over what they will serve for friends when they come over?? My biggest tip is to keep it simple! One thing done super well, with a few punchy extras to dollop or sprinkle. This is a crunchy Deep South inspired fried chicken, with a simply limey, coriander slaw, with sriracha sour cream, fresh chilli and Smokey BBQ sauce. All can be made in advance. A quick deep fry just before serving. And as it’s chicken thighs, they’ll stay deliciously juicy. Perfect food for a Friday night drinks party

03.01.2022 This is Acar (pronounced achar), a punchy little Malaysian side dish, in the form of veggies pickled with all the flavours of Southeast Asia that I love! Turmeric, garlic, ginger, galangal, chilli, peanuts and sesame seeds are combined with earthy spices of coriander, fennel, cinnamon and cloves. It’s spicy, it’s sweet and it’s vinegary and went super well with a Malaysian chicken curry I made on the weekend. I’ve been snacking on it every day for a few days now and I’m going to share the recipe on the website tomorrow. There are lots of different methods to making this and I’ve tried a few of them. And....I think I’ve come up with a winner combo here
