23.01.2022 Does the shape of your wine glasses really affect the taste of your wine? Science says yes! In a 2015 Japanese study by the Tokyo Medical and Dental University, scientists used a special camera imaging system to record the aroma profiles of wine in different glasses and temperatures. The results found that different glass shapes had a profound impact on the vapours that the wine gives off. Wine glass shapes form the ethanol gasses given off into a ring shape, concentrating ...them at the edges of the glass and allowing the wine’s aroma to swell in the centre of the glass. Straighter glasses ill-suited to wine caused the ethanol to mix with the wine aroma more evenly which causes the smell and taste to become more bitter.
