25.01.2022 Once again we had a successful outcome of an A-Rating for our abattoir's annual Food Authority licencing audit yesterday, which assesses our compliance with the NSW Regulations, Australian Standards for production of meat for human consumption, and Biosecurity. We are proud to have such a dedicated team of staff who work with us to maintain our high standard.



24.01.2022 We had a successful editorial by the Canowindra Phoenix (free local newspaper) placed this week in support of our advertising program which has had a very positive response from the local community. This is what the Phoenix had to say:- "From the Pride of Oak Paddock to Your Plate" Tablelands Premier Meats, located just outside Canowindra at Pride of Oak is an 'on-farm' fully licenced abattoir and meat processor run by Stephen Tamplin and his team. ... As well as processing their own naturally grown animals such as sheep, goats, cattle, pigs, chickens, ducks and turkeys, they provide service kills for other growers, with no minimum kill numbers required. This specialist boutique meat processor is focused on being pro-organic with no chemical loading into the meats when processed, instead they use a UV water treatment to maintain the water standards. This means the end product is chemical taint-free, providing meat of the highest standard. This is reflected in the taste and freshness of the products. 23.01.2022 How beautiful The Royal Melbourne Hospital Scrub Choir is back, this time with a rendition of The Pretenders' 'I'll Stand By You'. The clip was filmed by hea...lthworkers on their phones and edited together "to let the community know that we are here for them now and always". Dr Emma O'Brien, who leads the music therapy service at RMH, said it was also a way for staff to connect with each other. "You can see a lot of people have come home from a really full-on day on the COVID wards and they're using music to help them feel OK," she said. "To let them relax, let go and have a bit of a cry." 20.01.2022 Having set up our business 'Tablelands Premier Meats' we have been on an ever-evolving journey. We didn't have or spend millions of dollars to set up everything in one hit. We started with building our boning room, using other slaughter facilities. Stephen learnt to butcher our own lambs and we then went to different farmers markets every weekend, with direct contact with customers, telling them our story and introduing them to our uniqueness, so they would know where our/the...ir meat comes from. This allowed us to maximise the exposure of our products. Then when we started to build our chemical-free meat processing facility and go through the loopholes with relevant departments, working with them but not against them, we wrote and prepared our own Food Safety Program and Work Instructions, at the end we were accrediated by NSW Food Authority as the first licensed private abattoir in 30 years in NSW. We wanted to follow our healthy philosophy so we don't use chlorinated or chemically treated town water to wash carcasses, instead we developed an Ultra-violet sterilised water with high pressure filters, we get the ideas from our nursing and naturopathic backgrounds. We added intrastructure, buildings and equipment as needed and when in demand. We converted part of the 100 years old shearing shed as undercover pens adjacent to the processing facility, so the animals are well protected and rested before processing. No stress of travelling and exposuring to the elements, this reflex on the quality of the meat. Animal welfare is top of our priority. We added an annex to accommodate poultry processing several years ago, then last year we built our beef room which allows us to process cattle up to 650 kg live weight. We have invested most if not all our income back into our business. Our business is debt free which allow us to improve, investigate and invest how to better our business. We are sourcing an automatic pig scalding and dehairing machine which will be more effective and efficient for pig processing, hopefully it will be available in a few weeks time, increasing our efficiency as a boutique abattoir. 20.01.2022 We started as a hobby farm running our 30+ dorper sheep in 2002 just to keep our paddocks clean as well as providing fresh farm meats and selling them at the farmers markets in Central West NSW region. Then when we noticed the animals we sent for processing were not always the ones given back to us and we were told to take them elsewhere when we raised our concern. So... we contacted and worked with NSW Food Authority, local council, relevant departments and after Stephen qua...lified as a Meat Inspector sucessfully set up our all species fully licensed meat processing facility 'Tablelands Premier Meats' near Canowindra in 2013. 15.01.2022 Today we have reached another milestone in the growth of our abattoir business - Well, after all the waiting our new scalder dehairer has finally been commissioned, and it works a real treat. Stephen worked with the design engineers to get the concept right, then the build started in early May 2020, delivered and located into position early July, wired and test run last week now used commercially today. This unit can scald and dehair to polished perfection pigs from 30 to 200 kg dressed weight in less than 10 minutes, regardless of original colour, Not only does it create a great finished pig, it removes 95% of the manual handling issues associated with pig processing. Turkey is one of the popular dishes on the table - roasted whole turkey, turkey rolls with cranberry, pine nut and seasoning, turkey marylands ... farm raised, chemical free turkeys are always taste much much better!!! 03.01.2022 Christmas is approaching, if you would like us to process your livestock so your family and friends can enjoy them this Christmas, please note that our abattoir last beef processing will be Monday 7th December, last lamb processing will be Monday 14th December to allow time for butchering before Christmas. Poultry processing last day is 22nd December. To avoid disappointment call Stephen on m.0447712370 as early as possible to book in, as our process time and space is almost at its full capacity. Our abattoir will be closed from 24th December, restart on Monday 11th January 2021.
