19.01.2022 'Cochinita pibil' has pre-Hispanic roots. It was used as an offering on the day of the dead. It used to be prepared in a cooking pit. Nowadays, it has replaced by stone or conventional ovens. Since then, 'cochinita pibil' has been prepared throughout México and it is one of my favourite dishes. It is especially representative of the state of Yucatán.
