06.01.2022 Making chicken bone broth from scratch for a hearty chicken stew I make the broth by soaking chicken thigh bones in cold water and apple cider vinegar for half an hour, then turn the heat onto high, adding chunks of fresh ginger, onion, garlic, coriander root, dried shiitake mushrooms, carrot, Lemmon grass, kaffir lime leaves, and cracked pepper.. Tomorrow morning I’ll strain it, and add to the liquid (throwing out the bones and roots etc) skinless chicken breasts, more of ...all of the above and cook for the day!! I like to serve this with fresh Bok Choy and rice noodles... You can also add pumpkin if you like, and/ or rice to make a thick Chicken Congee (Chinese savoury rice porridge), or just have it as is... Yum!!
