22.01.2022 Harvest is underway again. A beautiful crop this year and walnuts will be dried by the end of this month. Just wish our interstate friends and family could be here.

12.01.2022 Pear and Walnut Bread Ingredients 60g butter... 1 cup raw sugar 2 eggs 2 cups plain flour 1 teaspoon baking powder (or 1/3 teaspoon of bicarb and 2/3 teaspoon of cream of tartar) teaspoon bicarbonate of soda Fresh nutmeg cup buttermilk (1/2 cup milk and tablespoon of white vinegar of lemon juice) 1 cup coarsely chopped pears 1 teaspoon brandy cup coarsely chopped walnuts Directions Cream butter and sugar. Add eggs, one at a time, beating well in between. Combine dry ingredients separately, then fold into mixture, alternating with the milk. Stir in the walnuts, brandy and pears, taking care to not over mix. Pour into loaf tin and bake for 1 hour at 175 degrees Centigrade. (This recipe works well doubled and it freezes beautifully)

01.01.2022 Coconut and Walnut Cake 120g butter Juice of 1 lemon and rind 4 egg yolks... 1 cups coconut cup chopped walnuts 100g sugar 100g self raising flour decorative whole walnuts decorative slices of pineapple Generously butter pie dish and decorate base with pineapple pieces and whole walnuts. In a separate bowl, cream butter and sugar. Add egg yolks one at a time Add coconut, lemon juice and rind Add flour Fold in beaten whites of egg. Poor or spoon into pie dish. Bake for 35 to 40 minutes at 180 degrees Celcius. Turn upside down when cool
