23.01.2022 This year has certainly thrown it's challenges to us all. The word 'pivot' has never been used so much before!! lol I started off fearing how I could best look after my clients only to 'pivot' into my free 'Building Resilience Webinars'. 13 weeks of free content and connection and I am so grateful for the people I got to meet virtually in that process. Then this time out of clinic gave space for the creation of the 'Total Gut Reset - 12 week program'. A lifelong access to 12... weeks of videos, content and support to really learn the keys aspects of having a health gut. I tested the waters and played small with my program for 2020, though I'm getting ready to gear up to open the programs doors in Feb 2021! To finish off the year I took a final leap of faith - moving my consultation business fully online allowing me to reach you wherever you are and take you on a unique gut healing journey. 20.01.2022 - Roasted Pumpkin and Caramelised Onion Cashew Dip - 1-2 cups of butternut pumpkin, large chunks and skin removed 1 red capsicum, de-seeded 1 onion, peeled and cut in half... 3/4 cup cashews (or macadamias) 1/4 cup macadamia oil good pinch salt and pepper 1/4 tsp cumin - Instructions - Place pumpkin, capsicum and onion on a baking tray, drizzle with oil and toast until cooked through and just browning. Allow to cool and peel capsicum skin from the flesh - discard the skin. Put all pumpkin, capsicum and onion into a food processor, add remaining ingredients and blend until desired consistency. I like mine a little chunky. Serve and enjoy with veggie sticks or seed crackers.
18.01.2022 Sometimes whilst eating clean, you just want a piece of toast. Well with a little extra prep you can have a Grain Free Flax Loaf made and sliced up frozen in the freezer. Ready to pop in the toaster in the morning. - Ingredients - 2 cups Almond Flour... 2/3 cup Tapioca Flour 2 tbsps Ground Flax Seed 1 tbsp Chia Seeds 1 tsp Bicarb Soda 1/4 tsp Sea Salt 3 Egg 1/4 cup Organic Coconut Milk 1 tbsp Maple Syrup 1/4 cup Coconut Oil 1 tsp Apple Cider Vinegar - Method - Preheat oven to 180 C and line a loaf tin with parchment paper Combine the dry ingredients together in one bowl and whisk the wet ingredients together in another bowl. Combine both wet and dry ingredients together and pour into loaf tin. Place the loaf tin in the oven for 30 to 40 mins or until golden brown on top and cooked through. Place a skewer in the centre of the bread and when the skewer comes out clean, the bread is ready.

Because pooping is the way we eliminate waste products, the longer it stays in there, the more toxins you will be reabsorbing ... #3 - 4 is just right #5 - 6 .....too fast! The quicker the evacuation the less likely you are absorbing your nutrients. You will also be losing a lot of electrolytes from the body as well What influences the timing of your poo? 12.01.2022 SHEPHERDS PIE Ingredients 2 tbsp coconut oil, ghee or duck fat 2 onions finely chopped... 3 cloves garlic finely chopped 3 carrots roughly chopped 3 sticks celery roughly chopped 1 cup button mushrooms finely chopped 1kg beef mince 2 cups of beef or lamb stock (homemade if possible) 3 tbsp tomato paste 1 tsp cumin 1 tsp turmeric 1 tsp paprika Generous pinch Himalayan salt 3 bay leaves 1 & 1/2 whole cauliflowers 1 leek finely sliced Method Heat oil in large casserole dish Add onion and garlic, cook until softened - about 2 minutes Meanwhile pulse celery and carrot in food processor until finely chopped, not puréed. Add to pan and cook for another 5 minutes. Add in mushrooms (chopped in the food processor also) cook for another 2 minutes Add in mince and cook for 5 minutes while breaking it up When mince is brown, add tomato paste, stock, bay leaves, cumin, turmeric, paprika and salt. Turn heat down to light simmer and cook until stock is reduced (about 1hr) Meanwhile steam cauliflower and leek Once cooked, purée with a hand blender. Add cauliflower and leek mash too mince, grate 2 macadamias over the top and brown for 10 minutes under the grill.
