23.01.2022 Almond paste or Marzipan. A basic for many pastries or even just to eat as is.

18.01.2022 A little lesson learnt. This shows the importance of letting food set or rest. All 4 photos are of the same caramelised pear cake. ... The first two photos are 24 hrs after siting in the fridge. The last 2 are after sitting in the fridge for 1 hr after cook. Not only did it look and cut so much better but the taste was also FAR better.

11.01.2022 -Chocolate Napoleon. Just think vanilla slice but all chocolate...Not for the faint hearted

09.01.2022 -Caramel pear cake. Chocolate sponge base with caramelised pears and caramel mousse. Topped with chocolate powder. Finally received my new cake rings and found a chance to use them.... Pretty happy with the result.
