This week I made the super impractical (a.k.a. cleaning out the cupboard) tempeh bake (featuring my favourite @tempeku_syd tempeh). However, the result that come out of this experiment is outta this world!!! Crispy, tender, and flavoursome tempe without oil nor frying involved... yes babeey all these are #oilfreevegan cooking! I'm writing down the recipe, but this is a reminder: it contains ingredien...t not normally found in your cupboard (unless you're an ingredient adventurer or gullible level 100 like me... I bought cricket powder in the past, yikes). These ingredients however, are easily found in the supermarket and do not cost an arm and a leg . Give this recipe a try! Theyre delicious, packed with protein, micronutrients, and whole lotta fiber! 60 gr dried chickpea (we will use 20 gr chickpea flour and 10 gr chickpea flakes) 100 gr tempe 30 gr teriyaki marinade (or any marinade) 1 heaping tsp (2 gr) curry powder 18 gr wheat germ 2 gr sugar 3 gr psyllium husk 1 Tbsp (5gr) nutritional yeast 1. On a blender, blend chickpea until it turns into flour 2. Separate chickpea flour from chickpea flakes (use strainer). 1. Cut tempe into thick block sticks. Marinade tempe in marinade of choice (i use teriyaki). Marinade overnight 2. Prepare wet batter: mix 20gr chickpea flour and curry powder. Add water until it becomes a thick batter. 3. Prepare dry mix: combine chickpea flake, psyllium husk, wheat germ, and sugar. Mix until even 4. Dip marinated tempeh into wet batter, then dry batter. Repeat until all tempe sticks are covered. Line them up on a baking tray (Fun fact: since the thick and wet batter are made of similar ingredients, if the dry batter falls into wet batter and dried up the wet batter... just add more water!) 5. Bake for 15 mins in a preheated oven.
