Cook until internal temperature reaches 4-5C lower than the desired final temperature... 4. For rare youre looking at about 20-25mins adding 5mins for more desireable doneness 5. Remove and let steaks rest for 5 minutes, covering lightly with foil. 6. Preheat a heavy skillet or cast-iron skillet over high heat until very hot, about 5 minutes.
