25.01.2022 Capers are a traditional inclusion in many recipes from around the Mediterranean, including chicken piccata and the incomparable spaghetti puttanesca. But the humble unripened flower bud of the caper bush, preserved in salt, vinegar or brine, is one of the kitchen’s most versatile flavour bombs, adding a hit of herbaceous, olive-like richness to dishes of almost any cuisine. Dotted with fried capers, drizzled with a caper-spiked salsa verde and served alongside a wintery cole...slaw of cabbage, almost-ripe pear, caperberries, Dijon mustard and sherry vinegar, this bistro-ready schnitzel recipe is bursting with colour, flavour and freshness. Not only do the crispy capers give a hit of flavour and texture, frying them flavours the oil that's then used to cook the schnitzel, tying all the flavours on the plate together with beautiful hints of caper. Find the recipe on our site now, and while you’re there, explore our entire caper range, including tiny capers in salt and in vinegar, lilliput capers in salt and vinegar, caperberries, caper leaves and more, all available at your nearest The Essential Ingredient store, or buy online for delivery to anywhere in Australia.
22.01.2022 A traditional Cornish pasty - that handheld, shortcrust pastry-wrapped parcel concealing diced beef, potato, swede and onion - is a thing of such singular, humble beauty that we're reluctant to even consider putting any kind of contemporary or culturally diverse spin on it. And yet, the thought of seeing other vegetables, meats and (gasp) even cheese tumble from that golden, crumbly pastry, is difficult to shake from our minds. So while this recipe is for a traditional Cornis...h pasty, we won't begrudge you swapping out the beef for melty cheese and a generous shake of paprika, or stuffing the pastry full of lamb mince, rose harissa, red onion and pomegranate jewels, or even filling it with diced chicken tossed with our superb tandoori paste. Check out our list of (arguably sacrilegious) fillings via the link below, and remember: the world is your pasty.
22.01.2022 Butter chicken is alleged to have been created in Delhi in the 1950s (though it wasn't called 'butter chicken' until it appeared on a menu in New York in 1975) as a way of reusing yesterday’s tandoori meats which, without the luxury of refrigeration, had a tendency to dry out quickly. Now a staple not just in India but around the world, butter chicken is as popular in home kitchens as it is in restaurants. By creating a flavourful, charred roast tandoori chicken first, then d...ousing it in vibrant butter chicken sauce made from the same premium tandoori paste - spiked with plenty of Pepe Saya Ghee and using coconut cream instead of cream for an extra hit of flavour - our version of this rich recipe packs the kind of punch you rarely get from at-home recipes. Our spicy and aromatic The Essential Ingredient Tandoori Paste isn't only incredible with chicken- it makes a wonderful marinade for lamb, firm-fleshed fish and prawns. Simply combine equal parts tandoori paste with natural yoghurt, and thin with a little lemon juice, then leave to marinate for at least three hours (but preferably overnight). The Essential Ingredient Tandoori Paste is available now from your nearest The Essential Ingredient store, or buy online for delivery to anywhere in Australia.
22.01.2022 This recipe makes absolutely no attempt to hide our love of chocolate. In fact, between the chocolate shortcrust tart shell, the dense, dark chocolate filling, the dusting of cocoa powder and the shards of cocoa nib praline, we’re not sure we could squeeze any more chocolate in if we wanted to. This tart is easy to make well ahead of your next party; you’ll just need to explain to your guests why there are already a few slices missing when it reaches the table. Want to learn ...more about chocolate and how to cook with it? Our FAQ Chocolate Guide - also on our website now - will help you choose the right chocolate for your recipe, pick your dutched cocoa from your undutched, and get foolproof advice on tempering. Whatever your chocolate needs, we have all the restaurant-quality ingredients and equipment you need in-store and online!
21.01.2022 From the moment @reynoldpoer grabbed a packet of our beautiful, vibrantly green matcha powder from the @masterchefau pantry shelf last night, we knew magic would ensue. We weren’t disappointed. His magnificent ‘Moss’ creation even managed to convert matcha-doubter @zonfrillo to the green side. For something a little easier to recreate at home, try mixing matcha powder into a custard tart mix, then dusting it over the toasted meringue piped on top. Grab a pack of The Essential Ingredient Matcha Powder, as found in the Masterchef pantry, online or in your nearest The Essential Ingredient store.

12.01.2022 Since the days of Ancient Rome, garum has been used as a condiment to not only season food, but also to add wonderfully complex fermented, briny notes to pastas, grilled meats, marinades, sauces and more. While we know despite the name that Caesar salad didn’t appear in the days of its namesake emperor, we love adding a good splash of our beautiful Australian-made garum to a Caesar salad dressing in place of the traditional anchovy fillets (sub tsp garum for each fillet... your recipe specifies). The flavour and aroma of the rich, dark liquor combines with the depth of aged Parmigiano Reggiano, the zing of the garlic, and the creaminess of the egg and oil emulsion to elevate this modern salad into an all-time classic. Pick up a bottle of The Essential Ingredient Garum in-store, or get one delivered from our online shop (link below), and use it to season perfectly-cooked steaks, add flavour to spaghetti alla vongole, kick your marinades up a notch, and much more!
12.01.2022 While it might seem like a long time, every minute of this incredible lamb shoulder recipe’s eight hour oven stint is spent driving the aromatic smokiness of the dried chillies as well as the Mexican oregano, garlic and other spices - deep into the meat, resulting in a tender, succulent and deeply flavourful centrepiece for your next dinner party. Cover the marinade-crusted roast with a pile of fresh herbs and green chilli, and serve with a quick tomatillo and white onion s...alsa, alongside a mountain of flour or corn tortillas, and you’ve got an unforgettable Mexican spread that will not only satisfy a whole table of guests, but make your house smell incredible for a whole day too. Check out the recipe below, and while you're there, grab the dried chillies, achiote paste, chipotle in adobo, Mexican Oregano, tomatillos and tortillas you need to make this magnificent recipe. Near one of our beautiful stores? They're packed with all specialty ingredients, professional-grade cookware, culinary books and inspiration you need to create something amazing in the kitchen.
12.01.2022 Few recipes are as exciting as a well-made tagine. This beautiful oven-to-table recipe, which you can find on our website, takes its name from the stoneware vessel in which it’s cooked. It combines the fatty richness of chicken, the spice and aroma of our stunning rose harissa, the bitter sourness of preserved lemons, the saltiness of olives and the sweet tartness of green raisins resulting in the perfect centrepiece to a Middle Eastern feast. Find all these specialty ingredients, as well as Graupera’s beautiful range of terracotta tagines, in your nearest The Essential Ingredient store, or buy online for delivery to anywhere in Australia.
08.01.2022 Stone & Grove olive leaf teas are made using fresh, estate grown olive leaves. Gently picked and made in Australia, @_stoneandgrove_ use a traditional Japanese green tea method to maximise quality, flavour and the benefits of the olive leaf antioxidants. With a richly herbaceous and well-balanced flavour, these Olive leaf teas are high in antioxidants, caffeine free and absolutely delicious. Available now in-store and online.
08.01.2022 A cup of tea on its own, even one of our beautiful The Essential Ingredient Ceylon-grown, loose-leafed varieties, is a missed opportunity. We’ll never pass up the chance to sip that perfectly-brewed English breakfast tea or high-grown pekoe black tea with a warm scone slathered with our four berry jam and whipped cream, or enjoy that invigorating pot of gunpowder green tea with some homemade sourdough crumpets (link to the recipe below), drizzled with lashings of local wildflower honey. Our range of jams are hand-made using fresh Australian fruit; perfect for scones, crepes, cakes and that slice of freshly-baked sourdough, while our The Essential Ingredient Ceylon teas are grown in mountain-top gardens in Sri Lanka and hand-picked at their prime, resulting in a full-flavoured cup of tea.
08.01.2022 Have you picked up a copy of Yotam Ottolenghi’s incredible new book ‘Flavour’ and are keen to get your hands on all the specialty ingredients the author and chef includes in his recipes? Or still haven’t bought the book...? We’ve got all your Flavour needs covered! In Flavour (as in Simple and Plenty), vegetables are treated as the heroes they have always been, their deliciousness dialled up to 'MAX' through the use of classic and contemporary techniques, a diverse assembly o...f cultural inspirations, and a collection of what we're understandably thrilled the chef and author (quite rightly) calls his 'essential ingredients'. Like the flavour bombs that featured throughout Simple, these are ingredients that Ottolenghi explains "capture the essence of the book." We've always believed that good cooking starts with the best, specially selected, quality ingredients which turn a great dish into something truly spectacular, and we're excited that so many of our favourite essentials also appear on Ottolenghi's list. Black limes, black garlic, red bell pepper flakes, dried cascabel chillies, rose harissa, dried hibiscus flowers and many other wonderful ingredients make the list. Whether you're cooking something from Flavour or simply want to try experimenting with something new in the kitchen, these are ingredients we know you'll love just as much as Ottolenghi does. Keen to try them all? Why not grab one of our Flavour Ingredient Sets, gathering a selection of these mighty ingredients (available with or without a copy of the book). Visit your nearest store to grab the book and all the specialty ingredients you need to make everything in there, or shop online for delivery to anywhere in Australia!
07.01.2022 Dried chillies, whether whole or in flaked form, add not only a hit of heat to any recipe, but an incredibly diverse range of flavours as well. Take, for example, the intense smokiness of chipotle chillies, the ripe fruitiness of ancho chillies, and the fiery umami of the habanero chilli. Of course, dried chillies are far more than a South and Central American ingredient, appearing in many of our favourite cuisines, from the shichimi togarashi of Japan to the Aleppo pepper fl...akes of Turkey and Syria, the gochugaru of Korea to the paprika flakes of Spain. While whole dried chillies make an impactful addition to stews, braises and marinades, and chilli flakes add a hit of both colour and heat when sprinkled over finished dished, we've compiled this list of some of our favourite ways to use these incredibly versatile ingredients. Explore our full dried chilli range in-store or online now!
