24.01.2022 We have a few new menu items from today onwards! This is the SAVOURY MINCE, with free range pork, hummus, baharat butter, tea egg, ciabatta. It’s here for the season, let us know what you think!



23.01.2022 Howdy folks! With more and more people returning to our seats it is with great excitement that we can announce the return of a weekend special dish to The Maillard Project! What the chefs have engineered is a Kimchi Pancake, loaded with beef bulgogi, parsnip puree, poached eggs and garnished with a fennel salad! Available this Saturday and Sunday (the 6th and 7th).... We look forward to seeing you all this weekend to try this tasty special!

23.01.2022 New menu item! GAZPACHO - Rump cap steak (cooked to medium), brioche, cucumber, carrot, pickles & basil oil. Available everyday from 11:15am onwards!

20.01.2022 Todays staff favourite is our BRAZIL - Jhone Lacerda available on the takeaway machine today. Sourced through @3brotherskoffee , this coffee is a slow fermented coffee, giving it some wild caramel, prune and chocolate flavours. Exceptional black or with milk. Let us know what you think!



20.01.2022 NEW MENU ITEM: the buckwheat casarecce with sundried tomato pesto, pine nut, red onion, compressed cucumber, heirloom tomato and basil. This amazing pasta is also gluten free and vegan!

20.01.2022 Did you know we roast all beans in store! We use a Loring 7kg roaster, considered to be one of the best in the market, providing a lot of technology to ensure consistency and flavour in the final product. Feel free to ask our roaster any questions you may have if you see him!

19.01.2022 You’ve all been enjoying our exotic filter list so much that because of popular demand, we’ve stocked up on some super rare and tasty coffees! Vacuum sealed to keep freshness in, these nano lots are super special and can’t wait for you to try them! We will keep you updated on their rotation of the filter menu.



17.01.2022 OPEN 2nd September! The wait is over. Maillard Project will officially be open this Wednesday from 7am and we hope to see you guys there. Full food menu, full coffee menu. 4 espresso options, 3 filter options. Come taste all our own roasted specialty coffee in house!

15.01.2022 Come try out all day French toast! With watermelon jam, compressed watermelon, fresh mango, berries, almond praline, coconut gel, raspberry and mint gel, and topped off with some vanilla ice cream.

09.01.2022 Unfortunately it’s Steve’s last week with us! He will be moving on to make great use of his finance degree and we’re super stoked for him! He has been a crucial part of both Coffee anthology and the Maillard Project over the last 2.5 years and in that time he never fails to bring such happy energy to the room and we will miss seeing him around every day. Steve is on every day with Friday being his last shift. If you want to say your goodbyes, come and pop around to wish him ...the best.

09.01.2022 The GEISHA is back! Our exotic filter option currently is a Colombian Geisha From the La Union farm. Heaps of tropical notes, think papaya, mango, tangerine and a real red wine consistency. Available for a limited time and is an additional $2 charge due to higher green bean price. Let us know what you think of it! We love it!

05.01.2022 Our take on avocado toast! With sourdough bread, sliced avocado, house made corn spread, sweet potato floss and some hazelnut dukkah. It’s available all day, everyday!

04.01.2022 Meet the team! This is Ryon! His bright and friendly energy is enough to light up any room. With years of experience in specialty coffee making, he’s our resident dine in coffee maker, and his latte art skills will blow you away! He’s also a big sweet tooth, so it’s no surprise he loved the waffles! We’re excited everyday to have him on our team!

04.01.2022 Delivery time! You may have seen last Friday that our store was surrounded by heaps of coffee sacks and boxes from our latest green bean delivery! This shipment is Ethiopian centred! With heaps of experiment carbonic maceration process and supernatural processed coffees. (With a few standard natural and washed in there too!) we still need to quality control and cup these for final tasting notes. But they should be on the menu very soon! We will keep you posted.
