21.01.2022 December 21st, stands out as being a potent day, not just because of the Solstice (a return to the light.), but also due to a very rare STAR alignment taking place this year known as the GREAT CONJUNCTION. The Great conjunction occurs every twenty years or so, and is when both Jupiter and Saturn align at the same degree of the zodiac. The Great Conjunction represents a changing of an era, and a time where we shift our way of viewing the world. As our WORLD VIEW CHANGES, s...o too does society and the way we choose to approach things. While the Great Conjunction happens every couple of decades, the 2020 alignment opens the door to an even bigger cycle. For the last 200 years, Jupiter and Saturn have been aligning predominantly in earth signs, but this year, on December 21st, 2020, Jupiter and Saturn will align in the air sign of Aquarius. Under this grand Conjunction, we could see a shift into more community-based living. Rather than looking to big governments or big businesses for support, we could instead turn to smaller, community-run organizations and small businesses. There could be a greater focus on this idea that we all thrive when the collective thrives, rather than a focus on individuals trying to compete with one another to get to the top. While this is all beautiful energy and can help us to create a new world, we also have to be mindful of losing our sense of individuality, losing our own thoughts and beliefs in favor of what the masses think, and becoming more connected and overly reliant on technology. Served with dollop of coconut yogurt, naan and good amount of greens. 2) simple and elegant Organic double Chocolate Earth cake with salted caramel. Served on a coconut & activated nuts base. 15.01.2022 I have been kindly asked to share a QUICK HEARTY RECIPE for this rainy Summer days. I learnt this Pumpkin risotto of my Italian friend and love making it for my little family. I add a good amount of burned crispy sage on the top of it Sage can help protect the body's cells from damage caused by free radicals due to its high antioxidant capacity. It’s also anti inflammatory & helps to reduce blood sugar. Just to name few benefits. Pumpkin & sage risotto... 1 tbsp olive oil 1 large onion chopped 1 pinch salt 2 cloves garlic minced 4 tsp fresh sage leaves thinly chopped 1 1/2 cups Arborio rice 1/3 cup white wine if you have some at home 4 cups stock your choice or broth 1 cup pumpkin puree ( 1 small pumpkin from local markets chopped into pieces/ them cooked to softness.... pureed with little bit of water in food processor at the end) 1/2 cup cheese your choice : vegan ( there is plenty of tips in #thesecretkitchencookbook how to make one), Parmesan or feta In a large skillet, add olive oil and cook chopped onion with a pinch of salt for about 2 minutes on medium-low heat. Add garlic and chopped sage, and cook for about 30 seconds or until fragrant but not brown. Add rice and cook until translucent, stirring often about 1 minute. Don’t let it brown. Deglaze with wine and stir. Add 1/2 to 1 cup stock and stir to incorporate. Cook until liquid is almost absorbed, stirring constantly. Repeat until there’s no stock left and rice is fully cooked (taste the rice to know when it's cooked). Stir in pumpkin puree and cheese, and cook just enough to heat the pumpkin. Remove from heat and serve immediately. Garnish with more cheese and sage which I burn to crispiness in olive oil or cultured butter (optional). ENJOY
