24.01.2022 Father’s Day dessert :) by far one of the easiest hacks to make caramel I’ve ever used is this...load up the slow cooker with as many cans of condensed milk as you can fit, cover with water, set on high and come back in about 8 hours.

21.01.2022 Its been a loooooong time i know...so let me fill you in on a few things since we last spoke :D. I got the "as good as its gunna get" from work cover in February this year after 2 surgeries and plenty of therapy for an injury to my left hand and i immediately set about doing all the things i had been postponing like refurbishing a pool table i bought 6 years ago lol. I also reignited my love of woodworking and churned out a couple of side projects. In the meantime, my darling... wife stole my kitchen downstairs and turned it in to her Young Living Essential Oils cave (see Essential Drops - Taking back my Health and Well-being) which i begrudgingly love. I did some cooking and creating in the kitchen, Archie our smallest turned 1 and our big kids turned 9 & 7. Corona hit in march as we all know and that postponed any hope of fudging for awhile. I recently saw Cadbury Choccies on sale for half price at coles and welp...i felt that it was time - so i bought a kilo or 10 :D Keep your eyes peeled on the page, i need to sort out a few things but there will be a run soon!!! 14.01.2022 Hey everyone I would love to take this chance to tell people a bit about myself and my beautiful family and why i started cooking fudge. My name is Chris, I'm 33 and I am a High Voltage Electrician working in town. My wife Bernadette and I have been married for 12 years next year and we have 3 beautiful children, Caitlyn (8) Rachael (6) and Archie (7 months). I have loved cooking and especially desserts for far too much of my life and chose the name "The Trusty Chef" from an ...old saying "never trust a skinny chef". If you've met me then you know i'm a little too trustworthy for my doc's liking ;). That being said I discovered my love of fudge as a kid wandering the Star Of the Sea Fete nights and began cooking fudge when i had a discussion with my sister in law about how to make caramel and "why cant you just put condensed milk in a pan and cook it into caramel". For those who know this obviously didn't work. I then went on the hunt for a caramel recipe and accidentally made fudge which reignited those childhood memories and had me making caramel fudge for my own yummy purposes. I volunteered some of my fudge at the St John's Moonlight Fair for sale. Around the same time we had a less than trustworthy babysitter take our Christmas Saving Tin and a good friend asked if i would sell her some of the fudge i was bringing to work and lo and behold the trusty chef was born! I often refer to my fudge as "crack" and the first time is free. I have had a whole swag of fun comments like "theres too much sugar in this fudge" or "can you make a sugar free fudge?" and for awhile among my work friends i was known as the "busty" chef. Ive met some amazing people and so many of them are regular customers and i thank you all the most!!! I get so worried and scared when i put up an event that no one wants my food anymore or maybe that last batch tasted a bit off (the amount of perfectly good fudge ive sent to work because i was paranoid is crazy) but i know i can count on that core group of people who are always there So thankyou to everyone who partakes in my food and a huge welcome to all of the new people who have joined from seeing our event. Welcome and i hope you all enjoy :D

10.01.2022 Bad News Everybody! I have to go back for more surgery on my Left Wrist! Which means i wont be able to make fudge for Christmas :( :( HOWEVER i don't go until the 7th of November so i will make as much fudge as i can until then and hopefully that will get some of you through till Christmas!!!! So if you were thinking of ordering but were holding out until later in the year i'm afraid there wont be a chance!!!! (I will be on work cover for at least 8 weeks while i heal). So let me know if you have an order in mind or take your chances when i put up what i have managed to cook on the 4th of November

07.01.2022 My Golly Gosh do i hate hate hate chocolate crumbly fudge lol. It burned the bum out of both of my fudge pots tonight - so my good one is soaking and it took me the better part of 45 minutes to wire buff the burnt chocolate off the base of the spare. You would think after making so much over the years i would have it down pat....you would be wrong lol The first failure was yesterday when i made, as i like to call it, Chocolate Sand (when the crystals form too large and it tas...tes just like chocolate powder and sand) so i recooked it (never a great idea) and wound up with Chocolate (Strong Burnt Flavour) Fudge which i didnt even feel right taking to work. Then the second failure happened when i dragged out the ole second place pot (i dont have much success with this bad boy) and cooked it too hot for too long....that one went straight to the bin and i spent the next 40 minutes with a brass brush on a power drill makin the stainless shiny again. An eventful evening to be sure :) :) See more
