Ingredients: 1 eggplant 2 zucchini... 1 red capsicum 2 cups fresh rocket 1 bunch parsley 1 cup assorted cherry tomatoes 5 radishes 1 cup buckwheat kernels 1 cup slithered almonds 1/2 cup pepita seeds 2 tbsp sesame seeds Cumin, ground Coriander seeds, ground Paprika Salt and pepper Extra virgin olive oil Dressing ingredients: 2 tbsp tahini 1 tbsp wholegrain mustard 1 tbsp honey (or rice malt syrup to make vegan) 1 tbsp balsamic vinegar 1 tbsp hot water 1 tbsp extra virgin olive oil Salt and pepper Method 1. Preheat oven to 180C degrees 2. Slice the eggplant, zucchini and capsicum into pieces and add to a lined baking tray 3. Drizzle olive oil over the sliced vegetables and sprinkle with salt, then bake in the oven for 40-45 minutes until they start to char 4. Add the buckwheat kernels, slithered almonds, pepita and sesame seeds to a frying pan over a medium heat 5. Add ground cumin, paprika, ground coriander seeds and salt to the pan 6. Add a tsp of olive oil to help the spices stick, toast mix until golden and fragrant 7. Slice the tomatoes, radish and parsley 8. Once the vegetables in the oven have baked and been left to cool, assemble the salad 9. Mix the dressing ingredients in a small bowl, then drizzle over salad before serving. Enjoy!
